Anyone Have Any Good Recipes For Homemade Chicken Egg Rolls

Can any one give me a good recpie for home made egg rolls.?

Okay, I'm Asian, and I have Hispanic, White, and Black friends that have told me they can never eat an egg roll from a Fast Food joint again because of mine- so here it is.

2 pack of frozen egg roll wrappers, make sure its the thin kind not that thick crap they sell at the regular supermarkets. If you have a local Asian Store, go there and get the red pack that says "MenLo"- if not, just use what you can get.

A pound of ground chicken or pork
1 head of regular cabbage ( shredded )
2 lrg carrots (grated)
2 stalks green onion ( thin sliced)
1-2 tbs chopped garlic
2 tbs salt
2 tbs pepper

Get a deep pan/wok.
Put a bit of oil in it. Medium High Heat.
Once it's heated put in your garlic.
Throw in your pork once you see the garlic browns a lil bit.
Stir it around with a spatula so it gets seperated and you don't have any lumps.
Once your meat is cooked, drain the grease.
Put it back in you pan/wok -
Now slowly add all your veggies ( cabbage carrots and green onion) and stir it around and get it all mixed up. Season with you salt and pepper, (you should know how much you like)
Turn it off- don't worry if you veggies are still not cooked- you don't want them cooked all the way yet.

Ok, now get your egg, crack it, and put inot a small shallow bowl ( for wrapping ( now the wrappers should have came with instructions, follow them) Don't worry if they don't look pretty if it's your first time, just try to get them some what tight and not too loose or else they will get a lot of grease in them later.

Now, with your clean pan/wok, dump in a lot of oil and fry your rolls until they are golden brown- you dont have to worry about the extra time now because you already cooked you meat and your veggies should've been half way there anyways. Let them cool off on some paper towels.

** And if you find it, the sauce they sell is great it's Spring Roll sauce, it's spicy and sweet, you can make that yourself too, but I don't bother with it because it's like 2.50 for the bottle. But the rolls should be good enough without it. ;)

What would be a good side dish with "chicken and avocado egg rolls"?

I'm making them with cabbage, bamboo shoots, red pepper, green onion, etc. What would be a good side?
Also what would be a better dipping sauce- sweet & sour or a taco/salsa?

Oriental Dipping Sauce

Servings: 4

"Serve as a dipping sauce with Asian-inspired dishes. This sauce is terrific with spring rolls or dumplings."

Ingredients:
1/4 cup soy sauce
1/2 teaspoon toasted sesame oil
1 clove garlic, minced
1 teaspoon green onions, chopped 1 tablespoon water
2 tablespoons hoisin sauce
1/4 teaspoon minced fresh ginger
1/2 teaspoon white sugar

Directions:
1. In a small mixing bowl, combine soy sauce, sesame oil, garlic, green onion, water, hoisin sauce, ginger, and sugar. Mix well, add additional hoisin sauce to thicken mixture to your desired consistency if needed. Cover the sauce, and refrigerate for 1 to 2 hours to allow flavors time to blend.
2. Before serving, pour mixture into a small saucepan and heat. Serve warm.

Does anyone have a good recipe for Yakimando? (Not sure of the spelling.)?

Ingredients
8oz Softened Cream Cheese
1/2C Cooked Peeled and Deveined Shrimp
2 Cloves Garlic
Fresh Peeled Ginger
Wonton Wrappers
Hot Oil
Egg Wash
Scallions

In a food processor or blener combine cream cheese, shrimp, garlic and 2 small slices of ginger. Puree till smooth. Fold in 4 TB of chopped scallions. Using one wonton wrapper at a time, place 2 tsp of mixture in center of wrapper and fold over, making a triangle and sealing edges with egg wash. Fry in hot oil for 2 - 3 minutes until crisp.

What kind of oil should i use to fry homemade egg rolls?

I use either canola oil or if out I like peanut oil. Not as healthy, but come on, you are making fried egg rolls.

Then you are also going to use a dip or hot mustard, and you can hardly have egg rolls without a main dish or at least fried rice.

Egg Roll recipe using glass noodles?

Man, you asked the right person. We usually made this all the times for any occasions. Especially my sister sister's inlaw or my cousins.

Here it is: Egg roll wrapper from the asian store. Buy the small round or square shape ones.

Indgredients: *Glass noodles (thin strands of noodles made of either rice and flour or another kind made of mung beans) they come in small packs and bundle up into a big pack consist of 5 or 6 small ones.
*meat (ground pork, chicken, or beef) whatever you prefer
*sweet onions, depending on how much you make(yellow preferrably)
*green scallions or cilantro (a bunch)
*black pepper
*soy sauce
*garlic
*salt for your taste

Method: Soak the glass noodles in hot water for half an hour, drain and cut the noodles with scissor to make them manageable/short. Add all the ingredients together and let it sit about 15/20 minutes to blend the flavor. Scoop a Tbsp of the mixture and put it on the edge of the wrapper and wrap it up. Heat up your oil until hot and fry them up. Before you start wrapping a bunch up, test a couple first to make sure the seasoning is just right, if so go ahead and make more.

Ooh, that's not all there is to it, the way we eat it is with the sweet and hot sauce. If you can make that with it, you won't go back to eating the regular egg roll. MM,MMM.
