This is a simple way of making cookies without eggs. Don't burn the cookies because they are going to tate like rocks. You could make them without the egg, but they will be a little bit crumbly. I once made a cake from a mix and forgot the eggs and it had no structure and started falling apart, so I just held it together with some frosting. But it tasted no differently. How can I bake cookies without milk or eggs?

most cookies don’t use milk; as for egg, I don’t know if it’s still out there, but in the health food section, NOT in the fridges, but in a box, is an egg substitute powder. It’s been years since I used it so I’m not sure about it, but you’ll know it if you find it. It’s all natural, it’s got the equivalent of 12 doz eggs per box and it has practically no cholesterol. I hope you can find it; it saved my sanity during the years I couldn’t eat eggs and wanted cookies and cakes. And it didn’t taste funny either. Good luck!

Eggless Brownies

2 1/3 cups all-purpose flour
1 cup water
1/2 cup margarine or butter
2/3 cup cocoa powder
2 cups sugar
1/2 tsp. salt
1 tsp. vanilla extract
2 1/2 tsp. baking powder
1/2 cup chopped nuts (optional)

Garnish (optional)
Confectioners' sugar

Preheat oven to 350 degrees F/180 degrees C. Grease a 9 x 13-inch baking pan with non-dairy margarine, or you may also use vegetable oil to grease the pan or spray pan with vegetable cooking spray.

Combine 1/3 cup of the flour with water in a medium saucepan. Cook on medium heat untill thick, stirring constantly. Set mixture aside to cool completely.

Melt margarine and stir in the cocoa powder. Sift together the remaining 2 cups flour with the baking powder. Beat sugar, salt, and vanilla into the cooled flour mixture, then add the melted butter/cocoa mixture.

Add the above mixture to the sifted flour/baking powder mixture. Add chopped nuts, if desired. Spoon batter into prepared baking pan and bake in preheated oven for 20 to 25 minutes. Let brownies cool in pan. Cut into squares when cooled completely. If desired, dust with confectioners' sugar.

3. Roll or scoop dough into walnut sized balls. Place them on unprepared cookie sheets 1 1/2 inches apart. Flatten cookies slightly. Bake for 15 to 20 minutes, until light golden brown. Remove from sheets to cool on racks.

Chocolate Shortbread
* 1/4 cup butter (no substitutes), softened
* 1/4 teaspoon vanilla extract
* 1/2 cup all-purpose flour
* 1/4 cup confectioners' sugar
* 1 tablespoon baking cocoa

1. In a mixing bowl, cream the butter. Add vanilla and mix well. Combine flour, sugar and cocoa; add to creamed mixture. Beat until dough holds together, about 3 minutes. Pat into a 9-in. x 4-in. rectangle. Cut into 2-in. x 1-1/2-in. strips. Place 1 in. apart on ungreased baking sheets. Prick with a fork. Bake at 300 degrees F for 20-25 minutes or until set. Cool for 5 minutes; remove to a wire rack to cool completely.
