To those of us who grew up in India, traveling in trains meant waking up to the familiar cries of Chai.... garam chai! floating above the cacophony as the train would come to a grinding halt at a busy junction. How to make persian chai?

Hi, I'm going to explain it step by step:

-I use " Black Alghazaleen tea" (loose or tea bag) pic: http://www.toc7f.com/new/nucleus/media/2... , "Ahmad tea" is also good, but you can use any kind of black tea as well.

-Use a teapot set like the one in the following picture: http://www.tulumba.com/mmTULUMBA/Images/...

-Boil some water in the bottom pot.

-Put the tea in the top pot and add some boiling water to it. (for 2 people you can use 1 full spoon of tea (or 1-2 tea bags) and 1 cup of hot water)

-Put the top one on the bottom one, lower the dim so that all the hot water won't evaporate, let it stay for about 15-20 min.

-Now the tea is ready! Pour some of the tea on the top pot in the cup, and add some hot water from the bottom pot to it. (the amount of tea and water depends on your taste and the strength of the tea.)

-Enjoy! :)

We used to have a Tefal one in Iran, but I guess they are designed specifically for Iranian consumers since I haven't seen any in North America, and they are 220 Voltage appliances so we cannot bring them over here! :D

Masala Chai, an aromatic spiced tea, has been the Indian drink of choice for hundreds of years. What non-dairy milk is the best substitute for cow's milk for Indian chai?

So, over the last few months after I posted this question, I tried experimentation with the following milk varieties for my chai - Soy milk (unsweetened), rice milk, oat milk, hemp milk, almond milk (unsweetened), flax milk (sweetened, unsweetened and unsweetened vanilla flavoured), Soy creamer, Coconut milk creamer. Minimal quantities of all this cost me about $60. The following is my ranking in order of decreasing similarity to chai with cow's milk. Higher is more similar. 1. Flax milk, unsweetened vanilla flavored2. Flax milk unsweetened + rice milk in about a 1:1 mixture3. Flax milk unsweetened + soy creamer4. Soy milk + rice milk in about a 1:1 mixture5. Rice milk with some coconut creamer6. Rice milk7. Soy milk8. Soy creamer9. Hemp milk10. Oat milk11. Almond milk12. Coconut creamerBy the time I got down to Rank 4 or Rank 5, there appeared to be no use to try mixtures, since the taste had significantly departed from chai for my liking, so I gave up. Oat milk, Almond milk and coconut creamer led to astounding horror and were complete failures.A useful tip that I did find, was that if you add elaichi to the chai you make (as you would do in normal masala chai too), then the influence of elaichi will negate the oddities of non-standard milk to a good extent. Nontheless, I have decided to stick to Flax Milk (unsweetened vanilla flavored) +  Cow's milk in a 3:1 mixture, and slowly wane off on cow's milk in time. The particular brand I found to be of use goes by "Good Karma" (pic below). Nutritional facts are compelling as well - http://www.goodkarmafoods.com/pr... . And as a carb-hogging-India (not crab-hogging, but carb-hogging), I can surely do with some Omega-3s and antioxidants in the same cup! :)I'm not sure if these varieties are available in India, but in the USA, all of these can be found in your nearest Whole Foods Market. And the good news is that all of these cost lesser than the usual organic diary milk brands such as Horizon or Organic Valley.Good luck!

Is tea (masala chai in India) bad for health? If yes, how? If no, then is it especially good or beneficial, and in what ways?

As with many other things, Masala chai (spiced black tea) is close enough to neutral in term of health effects that you may drink it or not based purely on taste and personal preference. If you are drinking it, don't stop for fear of adverse health effect. If you don't drink it, don't start just for the health benefits.More than anything, Masala chai is chai, black tea. Its main ingredient that should concern you is caffeine.  Unless you are drinking in excess, caffeine is safe and present in many foods. Caffeine's main benefit is helping you stay alert and awake, a big bonus if it prevents you from falling asleep at the wheel or in front of your boss. Caffeine may be an issue for certain heart conditions and sleep disorders. If you are not being medicated for either, you should be safe. Ask your doctor.Then there is the Masala part, the spices. Normally pepper, ginger, cardamon, cinnamon, and cloves. Most of these have been touted as having all kinds of health benefits, anti-inflammatory and antioxidant properties for most of them. Wether the amounts present in a cup of tea are enough to confer any benefits I don't know but at least they won't hurt.In summary, some possible benefits and no harm (except for heart or sleep conditions). Drink it if you like it (I do), don't rush to get some if you don't.On top of that, don't underestimate the power of daily rituals in your life. Preparing and enjoying your cup of tea maybe the biggest benefit you can get from it, if you sit down to savor it. Also, if you rush to make it to put it in a travel mug to drink while you teleconference during your drive to work, the increased possibility of an accident will wipe out all possible benefits.

I am not sure, If I get the question right. but I am assuming that you meant how to make "Indian Masala Chai"Following Serves 4 cups- Put on the stove, a pan with 3 cups of water  - add 1 inch piece of ginger (crushed)  - add 3-4 cardamom  - Bring the water to boilOnce water boils, add 2-4 tea spoons of Tea (Personal recommendation Assam Tea), - Wait for for color to get nice and dark (some people believe that boiling tea leaves in water makes it taste a bit bitter, but that is a personal choice)- Add one cup of milk- When the chai is about to boil add sugar (Again, if you prefer to serve sugar separately you can do so, but i prefer it this way) - Simmer the stove after a boil, and serve.Some things worth trying:- Try adding Tulsi leaves (Indian basil, Ocimum tenuiflorum)- Try adding black pepper (Works wonders for common cold)- Try adding cinnamon (just a pinch)

How do you make chai tea?

Four four cups of tea: Pour three cups of water into a saucepan. Add some spices (cinnamon, nutmeg, black pepper, staranise, etc, whatever you feel like, depends on your taste). Boil until the water starts to smell like the spices. Add in a cup of whole milk, or half and half (you can use skim milk, but it won't taste as good).

When it's back on the boil, throw in four black tea teabags (like orange pekoe), and boil until the colour is good (not too dark). Pull the teabags out, pour into cups and add sugar to taste.
