What is vegetarian ground round?

Yes, it's TVP (textured vegetable protein). It's not tofu - people seem to think that tofu is the only meat substitute out there.

Ground round is great if you fry it up in a pan and add one cup of salsa, chili powder, chili flakes, then use it in tacos!

You always have to be careful to season meat alternatives. The more seasoning, the better. If it tastes gross, you didn't season it enough!

What is a good vegetarian substitute for the meat on nachos?

Ah, one of my favorite early discoveries when I became a vegetarian was that lentils are a really good meat substitute. Cook, season with taco spices then drain. You can put them directly on the nachos or you can mash them.I tell a funny story about this in my Reluctant Vegetarian Cookbook. When I recommend this book, I am more interested in being helpful than I am in selling cookbooks.

What could I use as a substitute for vegetable juice in Minestrone soup?

Which recipe are you using? I have never used vegetable juice when making minestrone soup!

This is the ingredients and recipe I usually use ...

A few splashes of olive oil
1 clove garlic, minced
1 large onion, chopped
2 stalks of celery, chopped
2 medium carrots, sliced
1 small can tomato paste
1 28 oz can diced tomatoes
8 cups chicken broth (or vegetable stock for vegetarian versions)
4 cups water
1 cup shredded cabbage
Salt and pepper to taste
Dried basil, oregano, sage and thyme to taste
1 cup chopped parsley
1 whole zucchini, sliced
1 cup frozen peas
1 cup navy beans, soaked in water over night
1 cup macaroni, uncooked

Heat olive oil in soup pot on medium low. Add garlic, onion, carrot and celery, sprinkle with salt. Saute until onions are soft. Add tomatoes, tomato paste, broth, water, cabbage, zucchini, peas and beans. Bring to a boil, reduce heat, and simmer for about 30 minutes. Add remaining ingredients except parsley, cook for about 10 to 12 more minutes to cook the pasta. Add parsley a minute or two before serving just to wilt it a little.

A substitute for nutritional yeast in vegepate or other vegetarian recipes? Miso or mushrooms perhaps ?

You'd be looking for a savory flavor, so I'd go with miso. That would mean reducing the amount of whatever liquid the recipe calls for. You could try very finely minced mushrooms instead but I'm afraid they would absorb some of that liquid and make the overall texture too dry.

Are vegan and vegetarian meat "substitutes" unhealthy?

faux meat is highly processed, which is my main issue with it. i think its most appropriate if you're having cravings and need something to satisfy you, but i wouldn't make it a huge part of your diet (also madly expensive!!) in the long term
what do you mean by dairy? do you mean milk substitutes like almond milk or coconut milk? those are natural and pretty healthy! rice milk is a little on the watery side/not as nutritious as the others. coconut milk is a little thick and fatty for my taste but idk search around. a lot of people like soy milk and its fine but i don't care for the taste. my favorite is almond milk because it is the healthiest, has a nice nutty flavor to it, and is about the same consistency as dairy so it seems legit in cereals, baking, etc

Can we make a vegetarian alternative to high end cuts of beef that taste as good as the real thing?

I’ve had vegetarian “sausage” and “burgers” that were close enough if I wanted to avoid meat, but right now there’s not significant technology to replicate the exact taste and texture of unground beef.If you’re vegetarian for health reasons and you want steak, you could compromise on occasion and perhaps enjoy a small amount of high-quality sliced steak with a salad, or in a stir-fry or another elaborate dish primarily consisting of vegetables. Consider the meat as a flavoring element instead of the main course.Beef itself isn’t inherently unhealthy in moderation, as all things.ON EDIT, I noticed in another answer Onam Kiazi Emmet brought up portobello mushrooms, which is a fantastic idea. You can season and grill a large mushroom as you would a steak, and get the same tasty Maillard searing effect as with meat. I’ve had one that had the smoky savory flavor and texture of the delicious rendered fatty portions on the edge of a steak, although it did not consist of fat. Portobello mushrooms aren’t steak, but can provide a very similar dining experience.

How do I make prop ground beef for the stage?

I am working on a show and I need to make something that looks like raw ground beef. It can't be something that can perish and it needs to look real enough from about 4 feet away. I would rather not use foam or plaster. Any ideas from those prop masters out there?
