What makes bakery cakes taste and smells different?

Bakers use commercial grade ingredients in general..they have been fine tuned and in general are more distinct in how they bake and how they taste, the smell is a result of the recipe..if you want to duplicate this you could go to a bakers or restaurant supply store and see if you can upgrade your supplies..but nothing can replace both a time honored and refined recipe and experience.

Why does my chocolate cake always have a fishy/bad smell?

I bake a lot, and i mean everything. Im baking almost everyday but i have completely given up on chocolate cake and I'm getting so annoyed. I have searched for this answer and can not find it. I always bake from scratch but tonight i made a lighter lava cake, which called for 1 cup of chocolate cake box mix so i used that and when it came out of the over...still got that fishy/ trashy smell. It's awful, no matter if i make it from scratch or from a box i always get it. All my ingredients are in a separate cabinet so they are not near any onions, ect. I have all new baking pans and trays and tonight i used ramekins. Anyone who is also a baker know why this is happening?

Can I use regular Chocolate cake mix in place of German Chocolate Cake Mix?

You can do that .......NO, it is not the same thing. German chocolate cake is made using the "German Chocolate" in it. The German chocolate is a lighter and sweeter chocolate than what regular baking chocolate is. The German Chocolate cake is also made using buttermilk. The cake is very moist and delicious.
The reason a store worker would suggest using a regular chocolate cake mix is because that is what supermarket bakeries use for their German chocolate cakes. I don't think anyone makes a German chocolate cake mix.....so, I would either go with the regular chocolate cake for the cake part, or I would make it from scratch and use the recipe found on the German Chocolate baking bar. ..and this is what the bar looks like and can be found with the other unsweetened baking chocolate.

Why does "wedding cake " taste so good?

It better be, because it's EXPENSIVE. Most bakeries can make a wedding cake to a smaller scale for you, I'm sure.

Some friends of mine did that very thing. They ordered a birthday cake from the baker that did their wedding cake.

Homemade white cake & icing recipe that tastes like a specialty bakery?

This cake is sure to impress! Trust me, you won't be dissapointed!

Bakery-Style White Cake
1 cup buttermilk
1 teaspoon baking soda
2 cups white sugar
1/2 cup butter, softened
1/2 cup vegetable oil
1/2 cup shortening (room temperature)
4 egg yolks
1/2 teaspoon almond extract
2 teaspoons vanilla
2 cups all-purpose flour
4 egg whites (room temperature)

Directions
Set oven to 325 degrees. Grease three 9-inch round cake pans (if desired line the bottom of the pans with parchment paper). In a bowl combine the buttermilk with baking soda; let stand while preparing the next steps. In a large bowl cream sugar with butter, oil, and shortening until very well combined (sugar granules should not remain). Add in egg yolks, almond extract and vanilla; beat until well combined. Add the buttermilk mixture alternately with the flour into the creamed mixture. In a large glass or stainless steel mixing bowl beat egg whites until stiff peaks form. Fold 1/3 of the whites into the creamed batter until blended, then fold in remaining whites until no streaks remain. Divide the batter between the three pans. Bake for 25-30 minutes or until cakes test done. Cool in pans for 15 minutes then remove to wire racks to cool completely before frosting.

Buttercream Frosting
6 tablespoons butter, softened (no substitutions)
3 tablespoons whipping cream, unwhipped (35%)
1 teaspoon vanilla
3 cups confectioners' sugar
food coloring (optional)

Directions
In a bowl, beat together the butter, whipping cream, and vanilla until smooth (about 3 minutes). Add the confectioners sugar; beat very well until smooth, adding more if necessary to achieve desired consistency. Add food coloring if desired. *In order for the icing to have a creamy texture, whipping cream must be used*
