Why does chilling an onion prevent crying?

When the onion is chilled, it temporarily suspends the natural juices from excreting upon cutting into the onion, thereby halting the tearing action. A lot of foods react differently at different temperatures and onions are just one of these examples. I've heard that it helps not to cut off the root end before you start to cut. However, I've tried that and it doesn't seem to make a difference that I can tell.

I just saw on TV last week that it helps to peel the onion under cold to cool running water. Then run the onion under the water every little bit as you're cutting it. That seems like quite a bit of hassle to me.

Personally, my husband thinks I look like a kook when I do this...and I only do it when I'm cutting a large amount of onions...but I just put on swimming goggles while I cut onions.

As for chilling the onion, it might help "tighten up" the skin so it won't release as much sulfenic acid, which, when it turns into a volatile gas, reacts with the water in your eyes and becomes a mild form of sulfuric acid. The sulfuric acid is what makes your eyes water.

Does freezing an onion keep you from crying? and when you freexe it it is cut in half....?

I tried freezing an onion 3 times recently. I have shed no tears since. I froze it whole, not cut in half. Before chopping I microwaved it for approx. 20 seconds to soften it a bit.

Some people are so slow with inappropriate dull knives it takes forever - I cry for THEM!
Develop superior knife skills and you won't have a problem with tears.
Partially freezing or cutting underwater changes the texture / flavor / is dangerous!

It isnt completely clear what your are asking in your question.... I dont know if chilling onions stops you from crying, but i had a hard time telling if you were asking me that, or if you wanted a title to reflect the question...

Yes, it does. I've known about this for year. Just stick it in the fridge for at least an hour.

Science fair project: does chilling an onion before cutting it cause less tears, HELP?

so I understand that I am in the 8th grade and that this science fair project is for a 5th grader, however, our science teacher wants ALL the science behind it. I understand WHY a onion makes us cry when cutting it, but I cannot find the reason as to why when chilling the onion first it causes less tears, does anyone know and could help me answer this question?

Well first you got to understand why people cry from onions. The onion vapours released when cutting the onion are attracted to the closest water vapour molecules (in most cases, this is your eyes) chilling the onion would probably reduce the amount of irritation to your eyes, but as soon you cut the onion you will be exposing these onion vapours to the air where they go and look for the closest water molecules.
