"Of the boys" is a prepositional phrase. Prepositional phrases are never part of the subject. They can never be part of the subject.

The subject is singular, so the verb is also singular: Each of the boys dances well. And yes, it's just like "He dances well." You're not pretending; you're separating the grammatical subject from the fact that you know there might be 100 boys. "Each of the 1,000 boys is very nice." Subject: each. Verb: is.

In the US, we use "family" as one unit, so "the family dances." "My family is," etc, but different countries treat these nouns as plural subjects: My family are, etc. I assume you're in the US; use "family dances."
