What is the Japanese god or goddess of animals?

From what I gather, the concept of "kami" in Japan is best translated as "spirits" rather than "god" since Shinto, the religion of Japan, is animistic. That means they believe that everything has a spirit. I think there is no generic deity of animals in the religion.

Maybe in the story you can say that the "god" is actually a congregation of spirits from dead animals. That's my opinion.

Japanese Shrine Guardian animals?

I'm not sure what the definition of gardian animals, but Japanese enshrines some animals like:
Lion-Dog (komainu). The most common animal in many shurines,
Fox: Enshrined in inari shirines.
Snake, Dragon: Considered as deity of water/lake/rain....
Sea Snake: Considerd as messenger of deities overseas, or other side of the world.
Cock: It would break the darkness.

Deer, dog, cat, cow, boar, mouse, pigions, monkey, turtle, flog, rabbit, centipede, crane, elephant, eel, lion, wolf, hornet, ,,, etc..: Some are gurdians, some are messengers of gods, some are embodiment or icon, some of these animal itself are considerd as gods / deities.

Which god or goddess's animal is a fox?

If you're hoping for classical mythology, sad to say but Greeks weren't big on foxes and wolves because they were sheep/goat farmers. Artemis was considered the goddess of the hunt and was therefore in charge of the forests and animals so if you'd want to go greek there's her.

Ogo, a Dogon (African tribe) Trickster God, is called Pale Fox but he's technically a jackal.
There's also a Tunpa (Native American tribe) Fox God called Aguara who was purportedly responsible for a candy much like chocolate!

Traditionally, these creatures are capable of shape-shifting. Stories about them mostly talk about how they transform into beautiful women (sounds familiar?) and deceive humans.In Japanese mythology, the more tails a kitsune has, the more powerful it is. Kitsune, a fox spirit able to take a form of a human female in japanese mythology where is a question.?

If it were 2 kitsune having children with each other, in no sense.

If it were a spirit kitsune and a human, then no... as they are a spirit creature linked to the fox, with a varying number of tails depending on age and power... not a normal fox animal. (If you are using kitsune to mean the spirit form that served Inari as messengers, vs just the japanese word for fox.)

As the definition of bestiality that you are referring to is:
"sexual relations between a person and an animal"

A spirit by definition would not be a normal animal, but rather a spirit that can manifest as either a version of a fox... or a human at later age. (And as any breeding would most likely occur only in human form, the most that you would have is interspecies breeding vs. bestiality.)

Later in history books like Book of Zhou and story collections like Extensive Records of the Taiping Era, the nine-tailed fox was depicted as a beast of fortune. Therefore, the story received criticisms stating the later writers only plagiarized earlier folklore, or that the telling of the stories was modified to discredit a different dynasty. The torture and creations of Mei Xi were very similar to those of the creations of Daji but were first used in Zhou dynasty with little historical evidence dating those back to Xia.

The nine-tailed fox appeared in the epic fantasy novel Fengshen Bang as a Yaojing, or spirit, controlled by the deity Nüwa and was ordered to bewitch King Zhou of Shang in the 11th century BC. The fox possessed the body of Daji and did her bidding. Daji was eventually killed by Jiang Ziya and the fox was condemned by Nüwa due to the fox's cruelty and disobeying its original order of bewitch King Zhou but do not harm others towards the end of Fengshen Bang.

In later stories, a nine-tailed fox was blamed for possessing Baosi like Daji and caused the downfall of Western Zhou, forcing the dynasty moving its capital and establish the Eastern Zhou period.
