What are some recipes for homemade cakes? How can I decorate the cake after it's been baked?

Hi I’m Chef Philippe, corporate chef for Chicago Steak Company, and welcome to my kitchen. Today, I want to talk to you about our delicious, creamy, New York Cheesecake from our Decadent Dessert Line. As you will see, each item in our dessert line has been handpicked to ensure that we offer you unique and elegant desserts to accompany your gourmet meal. Here we have our New York Style Cheesecake. Also, called Original or Plain Cheesecake, I can assure you there is nothing PLAIN about this cheesecake. As with all of our cheesecakes, this cheesecake is built on a custom blend of honey-graham-cracker-pecans crust and topped with a smooth cream cheese filling. Between these two, you get the perfect balance of rich creamy filling and crisp graham cracker crunch in each bite. You’ll notice this cake is pre-cut for you so it’s ready to serve to 12 friends. And what I like to do is offer some fresh fruit, maybe strawberries or raspberries to top it off. So there you have our New York Cheesecake from our Decadent Dessert Line. Cheesecake that are frozen cannot be cut well and hot cheesecake may get soften and fall apart while cutting. Use a neat and hot blade to share through your cheesecake. The thinner the blade, the better pieces you will get of your cheese cake. Do not try to use a cake cutting knife as this will not allow you having clean slices. Dip the blade into warm water between each piece you cut. This will lessen the chance of the blade getting sticky. Following are some tips on how to serve a New York Cheesecake so you have a perfectly sliced New York style cheesecake for your guests:§ First of all you need to know what should be the size of your cake you want for your party. A cake with three pound weight can be sliced into 12 pieces. Not all of the guests will have one full sized piece and some them will search for a half piece. So you can take that a three pounded cake is enough for 12-15 person of the party.

It takes 4 cooks 4 hours to bake 4 cakes. Assuming no change of rate, how many hours will it take 8 cooks to bake 8 cakes?

8 hours is the correct answer. Let me explain.There is only one oven. The original question does not state that, but there must be only one oven, because no cake in the world takes 4 hours to bake. If we’re assuming each individual cake is baking for 1 hour (probably a Canadian style cheesecake), we can deduct that there is only 1 oven, because these cakes must be baked sequentially. Otherwise, it would not take 4 hours to bake them.For the same reason, it is safe to assume that the oven is too small to bake multiple cakes at the same time.So, if we want 8 cakes in this scenario, regardless of the number of cooks, we will need 8 hours to bake all of them...*drops the microphone**goes back to baking cheesecakes*

What size cake to make for 75-100 people with or without tiers?

Here's my two cents...

The catering standard that I work with when ordering cakes is :

-a 1/2 sheet cake is good for about 40-50 people

-a Whole sheet cake is good for about 100 people

If you are uncertain what a 1/2 or whole sheet cake looks like just go to a commercial bakery and have them show you.

-On a different note, my mother is always saying at every wedding: "Oh what a shame...by the time they bring in the cake everyone's full and alot of cake is wasted". She is very right in that it's a waste of time/labor, money & all the ingredients when it is cut and they only take a few bites & toss it. This does happen alot at big events. My suggestion to you is that if this is of any concern, gourmet cupcakes have really become a big hit at catered events because they can eat it there or have a little container/bag to take it home for later. I've seen some dynamite cupcakes on tiers & in those great "cupcake trees" that are used in their presentations. If you don't have a metal cupcake tree to work with don't worry. Here's a great catering trick: just invert various sizes of bowls upside/down and place plates on top of the bottom of the bowls. Next, cover the entire table with bowls & plates of various sizes. Then, gently place a nice table cloth over everything creating "little stage/tiers" for all of your cupcakes. You can then decorate around them with flowers, little votive candles, rose pedals, shells, colorful mardi gras style necklaces or whatever you think is appropriate to the theme of your party.

Can you order a cake from the walmart bakery and pay with food stamps?

Yes you can. My daughter has specially ordered birthday cakes at Hyvee Bakery and Super Target, paid for both with food stamps ( most recently in February). Someone mentioned not being able to buy custom items from deli/bakery. That is incorrect. You cannot buy hot prepared foods from the deli, such as the rotisserie chicken, but you can buy that same chicken the next day when it is sold cold. You can buy cold salads from the deli, but not hot vegetables or side dishes.
Also, it does no good to call the stores to ask questions, they have no idea what food stamps will and won't cover. They just scan the grocery items and if food stamps doesn't cover it, you have to pay for it.

How do you bake a chocolate cake?

Ingredients· 200g butter, softened· 1 cup raw caster sugar· 1 teaspoon vanilla extract· 2 eggs· 180g dark chocolate, melted, cooled· 1/4 cup cocoa powder· 1 3/4 cups self-raising flour· 1 cup buttermilkPeanut butter frosting· 125g butter, softened· 3/4 cup smooth peanut butter·  1 cup icing sugar mixturePeanut butter ganache· 75g milk chocolate· 75g dark chocolate·  1/3 cup thickened cream·  2 tablespoons smooth peanut butterMethod1) Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 20cm (base) round cake pan. Line base and side with baking paper. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add melted chocolate and cocoa, beat until just combined.2) Add half the flour and half the buttermilk. Stir to combine. Repeat with remaining flour and buttermilk. Spoon mixture into pan. Smooth surface. Bake for 1 hour 10 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 15 minutes. Transfer to a wire rack to cool completely.3) Make frosting: Using an electric mixer, beat butter and peanut butter until light and fluffy. Gradually add icing sugar mixture, beating constantly until combined.4) Make ganache: Place chocolate, cream and peanut butter in a heatproof, microwave-safe bowl. Microwave on medium (50%) for 2 to 3 minutes, stirring every 30 seconds with a metal spoon, or until melted and smooth. Refrigerate for 5 minutes or until thick and spreadable.5) Meanwhile, using a serrated knife, cut cake into thirds horizontally. Place base on a plate. Spread with half the frosting. Repeat with middle layer and remaining frosting. Sandwich with cake top. Spread cake with ganache. Set aside for 20 minutes to set. Serve.

Okay, so today I got a tip from a cupcake decorating kit, and I am wanting to make cupcakes and what not and try out this new tip. Yet, the problem is, I have no idea what type of fillings I should use.

If anyone has any ideas of fillings I can use and its recipie, please tell me!!!

How big of a wedding cake to feed 200 people?

ok i own a bakery and decorate cake professionally, anyways. it depends if you want to keep the top or not. if you do then best to get 4-5 tiers if you don't plan to keep it then 3-4 would do fine. there are other components that go into it also. if you want you can check out my site it is www.palaisbakery.com or email me at angela@cjsmemories.com
