How can bread be refrozen?

Yes you can freeze bread, and if you’ll not be using it all within a few days, it SHOULD be frozen before it gets hard and/or moldy. As I am but one person with no one else to feed, I do a lot of freezing. Regarding bread, I buy what I like, sometimes in multiples and simply place the sealed loaves in my freezer. When I need it, I remove what I need for the next two or three days to a zip-lock bag and put it in my breadbox. At this point the rest of the loaf should be wrapped in plastic wrap and then put back in it’s original bag—just a twist tie will keep it fresh—the extra wrap will protect against ‘freezer burn’ or air getting to the bread, thus interfering with quality. This is hardly new and quite effective, my old Nanny used to buy loaves and loaves of bread—she had a large freezer in her basement and I remember watching her come up stairs with these frozen loaves. I never had a stale or old tasting sandwich or toast under her care. Finally, this is great for homemade bread, often made in batches that produce several loaves. Once the bread has cooled (but is still slightly warm) wrap immediately in plastic wrap and then a layer of foil. Make a good, tight little package. When you use it, thawed and rewarmed in the oven—everyone will think you just baked it that day.

Why shouldn't you eat refrozen ice cream?

Refrozen ice cream WILL NOT HURT YOU (unless you left it out overnight and it thawed completely)
The problem with refrozen ice cream is because of the slow freezing taking place the ice crystals grow so big that the cream cells get broken by these ice crystals and the texture becomes very bad and it tastes and feels bad.

In converse that is why when making ice cream it is important to freeze fast and keep temperatures very cold --which equals small ice crystals which do not break cell walls.

Is it really bad to refreeze food?

I’ve refreezed food and had it come out okay. It depends on what the food is though. Usually bread can be thawed and refrozen, though it doesn’t taste as fresh as if it was never frozen or frozen only once. There is a safety concern with some foods like meats, but it’s not due just to freezing and thawing cycles per se, it’s due to the possibility of spoilage while the meat is thawed.

How can can thawed chicken be refrozen?

Refreezing raw chicken is not recommended but if you have a very reliable source for vacuum packed well kept frozen chicken that you take home frozen and thaw but need to refreeze for lack of ability to cook it at that time, you can refreeze, but understand that the thawing process will compromise the texture of the meat. Ice crystals will puncture the cell walls making the texture soft and unpleasant when you thaw the second time and attempt to cook. If you left the meat thawed for any longer than one day, you will risk bacteria development which can result in a less than acceptable gastronomical experience to say the least…
