If you’d be living in Nice, you’d be considered a French Resident, with your primary residence being in France. Its very simple!!! Since you've been hired you have to apply for a Professional Permit at the BOI (Board of Investment). Checkout this link www.investmauritius.com and download the application forms from there.

If you marry her before coming its much better and she will easily get a residence permit as your dependent but she has NO right to work.

You need to get a work permit from the Swiss canton where you live, but this is quite easy for EU citizens.With regard to jobs, yes in theory, though some are restricted to Swiss citizens, including governmental and some medical positions. That said, many employers look for specific language skills. Assume you will need fluent German and/or French for most Swiss companies and many foreign ones.
