Canning Homemade Corn Cobs How About Canning Some Jelly

Can I make cornbread using canned corn?

Yes you can, but drain it well.

What are some good side dishes to accompany corned beef?

After cooking the corned beef, cooling, trimming and slicing, you might enjoy it heated in or over water spiced with some cardamom and lots of whole and ground coriander seed.Cabbage is so traditional that it's hard to think of anything else, but it offers a variety of options:steamed, then butteredsauerkraut, just warmed or room-temperature or even chilledcooked shredded cabbage in any of the choucroute styles -- sweet and savory with apple and bacon, slightly sour with more vinegar than sugar, with spices like caraway or juniper.  Actually, the choucroute could be the base for the entire dinner, with the corned beef, other meats and various garnitures.Potatoes are very traditional:boiled in salty water or corned beef cooking liquid, then butteredparsleyed in butter or cream saucebaked, and maybe stuffed or topped with anythingmashed, and maybe seasoned with garlic&black pepper, or laced with a vein of hot chili paste, fried or roastedgnocchi would go very well, plain or saucedCarrots are usual:boiled and butteredgingeredroastedThe other boiled-dinner regulars are onions and parsnips.Corned beef cries out for sauces and toppings, which might include:cooked apple, baked apple, and applesaucecranberry sauce, cranberry jelly or even DIY cranberry-flavored Jellomustardsweet chili sauce (Thai style)mint or coriander chutneyKashmiri garlic masala or an Indian garlic pickleA corned beef dinner might include other sides, especially boiled or steamed or simmered vegetables.artichoke hearts, even canned ones when rinsed several times and then heated gently in lemon juice, and then dressed with lemon juice and/or buttergreen peas, buttered or herbedcreamed spinachasparagus, hot or coldpolentarisottoOther than that, I can't think of ANYTHING that goes with corned beef -- maybe some rye bread with kraut or slaw, maybe swiss cheese, and then Russian dressing.

What American dishes seem disgusting to foreigners?

Foreigner Here. Currently in the US for about 8 years. Here’s my list:GravyTurkey (For some reason the meat has a weird smell to it)CrawfishFried picklesPoptartsMeatloafDeep fried alligatorWell done steak (I know that this isn’t an “American dish” necessarily but I’ve seen tons of folks here order it this way and I don’t understand why?!!)ChitterlingsChilliNow these are all obviously my personal preferences, but I really don’t like eating any of the above. I find them really awful tasting.A nice juicy hamburger though with some bacon, onion & cheese on top, a cold beer and some apple pie after? Count me in!!

Fellow college students, what are your favorite meals and snacks that you can prepare in your dorm room?

I have four papers that are each going to be in excess of forty pages to finish writing in addition to final exams to prepare for, so I'm planning to become a part-time hermit the next few weeks and have all weekday lunches and snacks in my room while working. I am fortunate to live in a sorority house that has a wonderful chef who makes dinner for us, so I'll continue to dine with my friends at night, but am going to skip eating out for lunch and snacks as much as possible until the end of the quarter. I'm planning a trip to Trader Joe's on Thursday to stock up on groceries, and am hoping to get suggestions for simple, healthy meals to make during my upcoming self-imposed solitary confinement sentence. I've been making either a fruit smoothie or corn on the cob and a salad whenever I stay in for lunch, but I think I need to diversify my diet a little.

What snacks and foods do you keep in your dorm room? What meals do you make most often? If you have a meal plan, how frequently do you eat in your room instead of in a dining hall or elsewhere?

I'd also welcome answers from non-students who might be able to provide recipes or ideas for relatively healthy vegetarian meals and snacks that I could make in my little room. I have a mini-fridge, blender, microwave, coffee maker, and a nifty toaster oven with a four-slice toaster built in, so I could set my culinary goals a bit higher than animal cracker and yogurt parfaits or smoothies.

Bonus Question ~ How much longer do you have until winter break? : )

What are the positive living habits you learned from your parents?

By current standards, Mom was a terrible cook. Her apple pies were undercooked, and her cauliflower boiled to a watery gray. But on $20/wk, she fed a family of 7 like none of our friends’moms ever could. She’d discovered Adelle Davis at a time when Mrs. Cleaver was pulling Pillsbury cupcakes from the oven. (This was in the 50’s)Our bread was either homemade or else some “weird” wholegrain stuff from a “weird” health food store on the hill.We gazed longingly at our friends’ box lunches packed with Wonder bread oozing Skippy peanut butter & jelly, with Hostess Twinkies for dessert. While we had to eat some dull-looking dry bread with Adam’s peanut butter & homemade plum jam soaked into it, a scrawny apple from the orchard our only dessert. It was agony.Velveeta? Purest heaven, but it wasn’t allowed in our house. And we had to eat imperfectly shaped corn on the cob, Italian plums coming out our ears, and neverending canned tomatoes because that’s what grew in the garden.Runny homemade yogurt was a daily staple. We fetched our milk raw from a nearby farm, we ate romaine for ‘dessert’ at dinnertime, we dumped wheat germ into our OJ each morning, and we suffered untold other dietary embarrassments throughout our childhood. It was terrible. As an adult, I’ve never stopped thanking my mother for her eccentric food obsessions. She was 20 years ahead of her time. And she “ruined” us for life.
