What is the best recipe to make Velveeta cheese for nachos?

I like a chili and salsa or chili and rotel style nachos cheese the best.Here are a few recipes I have tried and really liked:Recipe 1, Burrito Style:Brick of Velveetacan of rotelcan of drained and rinsed black, pinto, or kidney beansMelt these 3 together, then serve over chips with a bit of added shredded cheese, warmed up spanish rice, and sour cream.Recipe 2, Hoosier Taco Style(Indianapolis area has tacos made with a hybrid of taco bell style seasonings and chili with beans, that is very tasty):Brick of VelveetaCan of your favorite ChiliCan of drained and rinsed black or kidney beanspacket of taco seasoning(no picture of this style dip, but here is a Hoosier style taco meat on Nachos from Roscoe’s Tacos)Melt these together, and serve over chips, optionally garnished with shredded lettuce, diced tomato, sliced black olives, sour cream, and a few dashes of a good taco/hot sauce, like Cholula.Recipe 3, Buffalo Chicken Style:Brick of VelveetaCan of chicken, or one chicken breast cooked and chopped, plus a few tablespoons of water1 Tbsp butter2–3 tbsp Frank’s Red HotMelt the Velveeta together with butter and hot sauce, and continue to heat while stirring in the chopped chicken. Serve over chips, optionally with a bit of chopped celery, carrots, and some drizzles of ranch or bleu cheese dressing.Recipe 4, Classic Chili style:Brick of VelveetaCan of your favorite chiliMelt these 2 together and serve as a dip.Recipe 5, Classic Rotel Style:Brick of VelveetaCan of Rotel tomatoesMelt these 2 together and serve as a dip.Recipe 6, Classic Salsa Style:Brick of VelveetaSmall jar of Picante Salsa(your choice of mild, medium, or hot)Melt these 2 together and serve as a dip.Recipe 7, Not sure of the true name, though I have heard it called Polish Mistakes or Polish Delights:Brick of VelveetaRoll of Tennessee Pride Hot Sausagesmall white onion, chopped(on bread here, but equally tasty on corn chips!)Brown and drain the sausage with the chopped onion, breaking it into small pieces while it cooks. Cube the Velveeta and melt this into the sausage blend. Serve as a dip for chips. Alternately, and more classically, spoon onto small pieces of cocktail rye bread, and bake on a cookie sheet in a low oven until browned. This turns out really well as a dip, but may require a few splashes of milk if it turns out a bit too thick to grab with chips.Hope these give you a few ideas.

What are the best restaurants to try when visiting Aurora, CO? What should you try while you're there?

I grew up in Aurora, CO. Despite the news of the last couple years, it’s a city with a ton of ethnic places to eat.Sam’s No. 3 - there are two in the Denver area, the one in Aurora is a staple. Huge portions of every kind of food you can imagine, and very reasonably priced.Chipotle - if you haven’t been to one you should go there. Good food, very healthy and quick.Santiago’s Mexican Food - these guys are a Colorado secret. Breakfast burritos that are out of this world - the green chili is what makes it, and they’re like $1.50 for one with eggs, chili, cheese and the meat of the day. The chile heat level can vary depending on the day because they make it every morning.Helga’s German Deli and Restaurant - this place has been in Aurora a long time and moved over next to the Town Center mall. Their service is a little slow, but the German food is authentic and huge portioned. It’s a great place for holiday dining, they do a full traditional German-style Christmas dinner.There are other places in Aurora - on Colfax there’s a ton of African restaurants. We took some co-workers to the one run by a Ghanian and they verified the food was authentic. These restaurants are the ones I miss the most since moving out of the area.
