Food tech?- dessert product ?

Were it me, I would go with a fruit napoleon...probably strawberries or a mix of berries. Or maybe a peach and passion fruit. It's really simple....you make a pastry cream:
1 cup milk
1/4 cup heavy cream
3 large egg yolks
1/4 cup white sugar
2 tbsp flour
3 tbsp cornstarch
3/4 tbsp liqueur or vanilla extract (you can also use orange extract)

In a bowl, combine the sugar and egg yolks. Sift the flour and cornstarch together, then add to the egg mixture until you have a smooth paste.

In a saucepan, combine the milk and cream on medium heat and bring it just to a boil. Remove from heat and add slowly to the egg mixture, whisking constantly to prevent curdling. Place this combination back into the saucepan, and cook over medium heat until it comes to a boil, whisking constantly. Once it begins boiling, continue to whisk for another 30-60 seconds until it becomes very thick. Remove from heat and whisk in the vanilla or liqueur. Pour into a clean, dry bowl and immediately cover with plastic wrap, pressing the wrap to the surface to prevent a "skin" from forming. Refrigerate until needed.

Note: if you want this a bit lighter, which I would for napoleons, whip 1/2 cup heavy cream to a soft peak and fold into the pastry cream. Also, for a richer flavor, you can add a split vanilla bean to the milk when you boil it, removing it after you whisk the milk into the eggs, and scrape the seeds to add back into the pastry cream.


Now all you need is puff pastry and the fruit. Cut the thawed puff pastry into rectangles, place on parchment and bake according to the pkg directions. Once baked and cooled, separate each rectangle into several layers. Place one layer on a plate, and top with pastry cream, then fruit. Add another layer, and repeat until you've used all the layers and end with the top layer of puff pastry. If you like you can make a quick icing of melted butter, powdered sugar and a little milk to drizzle over the top, or just dust with powdered sugar. Sometimes with the berries, I like to make a quick ganache (just hot cream poured over chocolate, stir until smooth) to drizzle over the top and the plate. Looks nice and tastes wonderful!
