My recipe for spinach dip calls for "1 bunch green onion"?

It means the whole bunch. By the time you cut about an inch off the top and trim the roots, it's not so much. Your recipe may also call for garlic, dill and other strong flavored ingredients. This is because the spinach is bland and the aromatics are necessary to bring out the flavors. If you are onion shy, however, save some of the onions and split the green stems part way down; soak these onions in ice water and use them for a pretty garnish. I love slices of raw pear with spinach dip.

Place them cut side down on a baking tray and roast at 400 (F) until the eggplant is soft and fully cooked. Let it cool, then peel and chop coarsely. Add the juice of a lemon, 2 tablespoons of good olive oil, a pinch of Aleppo pepper, a half teaspoon of za’atar and a good sprinkling of sumac. Then add enough tahini to make a smooth paste. You can serve it with a bit more sumac sprinkled on top, and you can add some fresh herbs if you like. Dill is good, as is mint or parsley, chopped fine.http://seasonalcookinturkey.com/...Muhammara
