Easy Home Cooked Meals

What is your Favorite Home Cooked Meal?

My Favorite is cooking a roast all night long in a crock pot with potatoes and carrots. I use Beefy Onion Soup mix in mine. It's really good. Also, I like fried steak with purple hull peas, mashed potatoes and gravy, maccaroni and cheese, and cornbread.

What home cooked meal would you recommend, that is fairly easy and reasonably healthy (with short recipe please :)) ?

6 bone-in, skin-on chicken thighs2 tablespoons unsalted butter12 ounces broccoli florets6 carrots, cut diagonally in 1-inch-thick slices1 teaspoon sesame seeds1 green onion, thinly slicedFOR THE TERIYAKI SAUCE1 tablespoon cornstarch1/2 cup reduced sodium soy sauce1/3 cup brown sugar, packed3 cloves garlic, minced1 tablespoon freshly grated ginger2 tablespoons honeyDIRECTIONS:Preheat oven to 400 degrees F. Lightly coat a 9×13 baking dish with nonstick spray. To make the teriyaki sauce, whisk together cornstarch and 1/4 cup water in a small bowl; set aside. In a small saucepan over medium heat, add soy sauce, brown sugar, garlic, ginger, honey and 1 cup water; bring to a simmer. Stir in cornstarch mixture until thickened enough to coat the back of a spoon, about 2 minutes; let cool to room temperature. Reserve 1/2 cup and set aside. In a gallon size Ziploc bag or large bowl, combine teriyaki sauce and chicken; marinate for at least 30 minutes to overnight, turning the bag occasionally. Drain the chicken from the sauce.Melt butter in a large skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat.Place chicken, skin-side up, in a single layer into the prepared baking dish. Top with broccoli, carrots and reserved 1/2 cup teriyaki sauce.Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes.Serve immediately, garnished with sesame seeds and green onion, if desired.Fairly simple, and in my opinion very delicious.

What home-cooked meals are fast to make and easy to clean up?

Couscous!I just discovered this on a clearance binge and damn is it spot on for quick and easy.Firstly, alls you need is the Couscous and some water and basically any seasonings you prefer for flavor. The Couscous just sucks it right up and it's a flavor bomb.It takes 5 minutes in boiling water and Bam your ready to go. I throw some lemon juice and maybe some cilantro if I have it and it's delicious. If I'm really feeling my chefly side I throw some lemon, butter and garlic and my taste buds are in heaven.5 - 15 minute meal in general depending on your depth of flavoring; doesn't really get any better then that. Plus there's virtually no clean up besides left overs, and a pot. Maybe a knife if your chopping shit up like garlic or whatever. Make sure you stir to get the flavor evenly mixed.Enjoy

Is fast food really cheaper than home-cooked food?

No; and it's not healthy to eat fast food all the time (although they sometimes offer a few healthy menus). For a typical meal at fast food, the cost ranges between $5+ and $7+ something plus tax just for one (1) meal, including the drink and fries.Yesterday, I bought a package of (4 medium- large sized) chicken breasts that weighed 4 lbs and cost $6.80 at a grocery store. I also bought a package of fresh green beans for less than $2.00. So, in total, I probably paid around $8.00 including tax. Based on my estimate, the package of chicken breasts can serve between 7- 8 people (or 7- 8 meals), since about a couple of them are larger than the rest. I also added some pieces of carrots to the green beans and sauteed them chopped onions and garlic, which were probably about the same # of servings or maybe a little less. I have leftovers in the fridge and will eat them again later.A 2-lb bag of brown rice also cost less than $2.00 in general, especially if you buy it at Walmart. White rice is the cheapest, but I usually don't buy them anymore.

What is your favorite home cooked meal?

One of my favorite home cooked meal is a nice soup - it’s easy and filling. I wrote a recipe for it in Adriano Di Piero's answer to What is your favorite home cooked meal? But it’s not really my favore home cooked meal to make. Even though I’m quite a risotto fan and I do love it, I wouldn’t consider it a home cooked meal - it’s more a fancy treat, to be honest. So, what is my favorite home cooked meal to make? I think that would be a staple Brazilian home cooked meal - Rice and Beans with vegetables and fried egg. I just love a nice, sunny side up, with slightly burnt edges and a almost runny yolk that turns your rice all yellow and rich! It’s so good! And it’s quite easy to do, albeit not necessarily fast.Ingredients for the rice1 cup of rice (about 100 grams)2 cups of waterhalf an onion, diced1 tbs vegetable oilsalt to tasteInstructionsAdd the onion, vegetable oil and salt to a pan. Brown the onions for a while and add the rice. Stir it for 2 minutes or so.Add the water. Close the lid and put it on low heat. Check it every 5 minutes or so. And done! It’s good for 2 servings.Ingredients for the beans500g of beans (black, pinto or any variety you can get)1 laurel leave1 garlic clove, minced1 tbs vegetable oilsalt to tasteInstructionsPut the beans into a pan and let it soak in water for 2 hours or more (overnight is better)In the morning, drain the beans, put them in a pressure cooker with a laurel leave and add water until the beans are covered. Cook under pressure for 20–30 minutesAfter it’s cooked, get a pan, add the oil and garlic to it, brown the onions until crispy. Add two laddles of the cooked beans to the pan and freeze the rest of the cooked beans (it freezes really well and this can give you up to 10 servings). For the vegetables, you can get anything - frozen packages are completely OK! It’s really simple and very easy!

What are some cheap, easy, and simple meals to cook?

I make a big pot of soup and refrigerate it for a week and there's always lots of leftovers, and it's really good. Not like those canned chunky or condensed soups either, home made soup tastes way better. And it's pretty easy to cook.

Cook a couple pounds of beef cutlets, or ground beef. I always use season-all on mine. And then once its fully cooked, place into a pot. Then cut up some potatoes, carrots, celery and onion and add into the pot. Then just add 1 beef bullion cube per cup of water and let cook on low-medium for about an hour. My boyfriend loves it. He makes me so mad though because he always steals the cuts of beef from out of the pot lol.

You can make some of the foods you listed that you don't want more tasty. For example, whenever I'd make ramen noodles, I'd add in a slice of cheese. It made a world of a difference! Be sure to make it less soupy though, otherwise the cheese won't mix well. For the grilled cheese, I always add a couple slices of sandwich meat. If I don't feel like grilling them I will put the bread, cheese and lunchmeat in the microwave and heat it for 30 seconds, and it comes out great. You can make tons of things with ground beef - tacos are fairly cheap and really good. Cook 1lb ground beef, add in one packet of taco seasoning, and make tacos, taco salads, or nachos. Just add lettuce, tomato, onion, and shredded cheese (salsa also if you prefer..I love it). You can store the leftover meat in the fridge for a couple days for leftovers as well, which turn out almost just as good as first made.

Another ground beef meal you can make is hamburger rice/potatoes. Cook a pound of ground beef with season-all, and mix into white rice or mashed potatoes. You can add a can of gravy to it for extra flavor, but either way it turns out good. Tator tot hot dish is cheap and easy. Buy a bag of tator tots (which can make 2-3 hot dishes), a can of Cambells beef or vegetable beef soup, and some instant white rice. Cook a cup of white rice in the microwave, then in a cooking pan add the soup (without the extra can of water), the rice and then layer the top with tator tots. You can sprinkle seasoning on the top if youd like. Then bake for about 20-25 minutes on 400.

Hope this helps!

What is your go-to recipe for a home cooked meal after a long day?

Like Mihaela, mine is pasta also, but tomato based not creamy.I almost always have skinned and seeded tomatoes in my freezer (I have a large garden in the summer) so I quickly thaw a quart-sized bag in hot water, enough to get it pliable. While that’s going, I get a pot of salted water going for the pasta, and get that cooked. In a separate pan, I warm some minced garlic (and sometimes onions) in oil for a few minutes until translucent, pour in the tomatoes, add a squirt of tomato paste to thicken it up quickly, and toss in a bit of basil or oregano or both. As soon as it’s warmed through the pasta is usually done so I drain it and toss it into the sauce, stir to coat, and serve with grated parmesan or romano cheese. I will sometimes add in a bit of cream to this sauce, but it’s great on it’s own. And if I have any leftover meatballs or ground or cubed meat, it might go in as well, same with veg.
