What are work collaboration tools like Dropbox, GitHub, Evernote, etc.? What are some others?

Collaboration tools can be any type of a software or service that helps teams work collaboratively on any project that’s common to multiple members in a team irrespective of their location. This includes tools used for communication like emails, chat messengers to project and task management apps.The tools that you’ve mentioned serve different categories of work -Dropbox - For file managementGithub - A code hosting platform, popularly used for hosting and code collaborationEvernote - Used as a knowledge management softwareApart from these, there are tonnes of tools that are used for collaboration. Chat tools are the most celebrated and extensively used ones. I just don’t employ one but also develop/work for a collaboration tool called Flock. Therefore, I very well understand the importance of a communication tool and the reliance of teams across the globe on them.Flock is a perfect example of a holistic collaboration tool. If so, you don't have to worry about the GFW. You can always use University VPN to circumvent that, and with GREAT speed. (of course it'll be FREE)

ALTERNATIVELY, you can use GoAgent and Google App Engine (FREE) to circumvent GFW.

In reality, the GFW has little to none effect on your daily life in China. It can always be bypassed.

What is an alternative for the Google products in mainland China?

For note-taking/bookmarking/calendar/contacts: Evernote (they also have Chinese language service called: Yinxiang Biji )For simple bookmarking and webclipping: PocketFor maps: Open Street Maps and Mapquest work. In a pinch you can go to the ctrip website, go to their map, which uses Google maps (in English) and it works in China. You can get an app for your smartphone which caches the map area your interested in onto your phone, so you can use Google Maps without an internet connection. You can also do this within the Google Map official app.Baidu Maps is very useful app for the smartphone, you can check bus routes and get navigation, if you cannot read Chinese, don’t be scared, it’s pretty easy to work out the right pattern of buttons to push to get what you want.Google Maps is available in Chinese in China hereFor Email: Yahoo email service works but nobody uses email here, you will also want a QQ account and Wechat app (they have an English versions)There’s some more info and updates on Google alternatives here and more internet resources for first time China visitors hereFor smartphone apps in China, download from a reputable source, such as Baidu. You’ll basically have to remove most google background services, as it makes the phone ‘hang’ and slow to use as it’s unable to connect to Google servers. Or buy a phone in China.For Search: Baidu is rubbish at English searches (good at Chinese language searches though) and so is Bing. You could try a Google mirror such as 谷歌搜 or GoogleFor translation: Baidu Translate app is comparable to the Google Translate app. Bing Translate also works. Google 翻译 works. There are many useful apps such as Hanping or Pleco.You can of course use VPN, but of course you have to pay each month and it’s a bit annoying having to login to VPN anytime you want to do something. But, it’s necessary to have it. So many sites are blocked, and sometimes defacto blocked, as many sites use Google services they are hideously slow to load in China. Many internet CDN’s (a type of caching service websites use to increase speed) are also blocked making many sites difficult to open.

Does your employer block note taking websites like Evernote, Google Keep, Simplenote, what industry and why?

All cloud / external network data storage and email are blocked. While they do not explain why, my guess would be control of data leakage. Every company that I’ve worked for classifies their internal data as at least “company confidential” which means it cannot be stored on networks that the company does not control or have an SLA agreement with . i.e. you user database gets hacked which puts company data at risk then you’ll fix it and pay out $x in as compensation for breaking your SLA.If I put company data into my personal Evernote, for example, there is no agreement between the company and Evernote to make Evernote accountable for protecting company data. Therefore it introduces a big risk to the company. To avoid that , they block access to it.I want to add the most companies that I’ve worked for have layers of classification of data. Data such a list of company holidays would be at the low end of security, which data such as customer names, phone numbers, account numbers, payment information, etc would be at the high end and protected more then data at the low end.

With collaborative Google products like Docs out of China, is there a local replacement for them there?

If you mean Google's search, then there are several search engines in China, like Baidu, so.com, Microsoft's Bing. Baidu is good at Chinese query and Bing is good at English query search.
