Kale is very good for you.  I have never liked it cooked--far too bitter for me.  But I recently had "massaged kale salad"--delicious!  I now make it a lot.Clean and dry one bunch of kale leaves stripped from their central ribsCut crosswise into narrow (1/4 inch) bands and then across (maybe 1/2 inch--the size is not critical, but the pieces should not be too big Put into a bowl with about 2T lemon juice (I use the juice of one large lemon) and a bit of saltMassage the kale (like kneading bread dough) with the lemon juice until it softens and quite a bit of liquid collects at the bottom of the bowl--it takes me 2 or 3 minutesPour off the liquidAdd 2-3 T shredded (not grated) parmesan and 2-3 T pine nuts, preferably toasted but if not that is ok, too.  Some recipes call for sunflower seeds, but I like the pine nuts.Stir thoroughly and add olive oil (1-2 T, to taste) and salt to taste if it needs moreWhile I heartily dislike cooked kale, I could eat this salad several nights a week.  The ingredients are flexible--friends of mine add raisins, shredded carrots, shredded apples, etc.
