Describe really tasty Mexican food?

I'm doing this Spanish project where I have to make up a menu for a Spanish restaurant. Some of the food items have to have those outlandish restaurant descriptions, the ones that go "Try out sizzling ribeye steak, cooked to absolute tender perfection, with the most delicious baked potato on the side" blah blah blah.
Basically, I hate Mexican food. LOL. So I don't really know how to describe things like tamales or tacos or burritos and all the other things. I don't really know what they're made of or what they taste like, what sauce comes with them, etc.

Sooo just describe a bunch of awesome Mexican food everyone loves but me and you will be helping me out a ton with my project.

Why do Americans overwhelmingly prefer all-white-meat chicken, when that is the driest and most flavorless part of the bird?

I agree with all that has been said above, but I'm going to throw in my "2 cents." Now in the U.S. We leave the skin on so that the breast will remain moist. Chicken breasts are almost always sautéed which is a  technique , if done properly, will result in a moist chicken breast. There are those who prefer to remove the skin from the breast prior to cooking and the result is usually a dry piece of meat. however, if the skin is left on the chicken and removed after cooking , the flesh will be moist .The breasts can also be grilled and before grilling the breast we place it in a brine of salt, sugar, and water ( at its most basic, some people add other ingredients but they are superfluous in my opinion) after removing from the brine it can be put in a marinade, if desired. When it's time to grill , the breast is dried off and cooked briefly over the hot zone of the grill, it is then moved to the cooler side where it finishes cooking. The result is a moist and juicy chicken breast with a slightly charred taste. My point is that, if you know the proper cooking techniques you can successfully cook chicken breasts that are moist and juicy. And on a final note,  more and more Americans are cooking and are passionate to learn how to cook foods correctly.

Why does my meat loaf always have so much grease when I cook it? And how can I cut down on the grease?

If you are using regular ground beef or hamburger, your meatloaf will have a lot of extra grease. Using a two-piece meatloaf pan , as a few others have suggested, is one way to let the grease drain off. You could also set a wire rack inside a cake pan, and then set your meat on that. No sense in buying something that only serves one purpose.

Ground chuck, which comes from a leaner cut of meat, will still yield some 'grease', but not as much as ground beef. Adding saltine crackers, bread crumbs or croutons, or even mashed potato flakes as a filler, will help absorb the grease and make for a juicier, tastier meatloaf. This is my preferred method. It works good even if I add pork or Italian sausage to the ground chuck.

Ground round or sirloin are very lean, and can result in a dry crumbly meatloaf unless you add some other liquid, such as milk or cream. A friend uses mashed potatoes in her meatloaf to add moisture, and act as a filler.

It's almost impossible to make a bad meatloaf, so keep experimenting until you find what works best for you.

Why do vegetarians want to eat "meat substitute" stuff?

They don't. Only the vegetarians who grew up in a primarily non-vegetarian culture do that. I grew up in a vegetarian culture (in India), and no one in that culture craves anything resembling meat at all. If anything, they look at mushrooms with disgust because its a fungus, and barely tolerate soy and tofu on rare occasions. Some 500 million people in India are vegetarians (compared to say 7 million in the US), and having grown up there as a vegetarian I can say I have never met a single person who wants a 'meat substitute'. Why would you want a substitute for something that you despise out of disgust? I am not sure how many % of that forms the world's vegetarians, but I am inclined to think a good chunk. So my point here is: no, vegetarians in general don't want meat substitutes. Maybe some vegetarians in some corners of the world do, thats probably because they came from a meat-eating background. Some people have a misconception that vegetarian meals are salads. Vegetarian meals consist primarily of rice, wheat (staples), vegetables, tubers (potatoes and the like), lentils, chickpeas, flour and flour-based foods, corn, sugars, milk, yogurt, cheese and recipes made with those. When you're eating super-tasty (and often fried, unhealthy) foods made with those things, there's no way you crave flesh, blood and bones.Myself, I started eating meat recently (for the sake of protein with fewer calories) but I have to force myself into it. There's no way I crave it or prefer it. I don't think I ever would. Given a choice, I would pick what my head signals as "real food" over animal matter. I have to make a serious mental effort to go pick up the meat and eat it. And then not puke it.

Why do you think one should not eat non-vegetarian food (as it is advised)? When we eat a fruit we pluck it from the tree, and the tree is alive (it breathes and so does the animal). What are your thoughts?

Perhaps you have not studied biology at a higher level and this ignorance is evident from this question.Fruits, particularly the juicy and fleshy ones are sweet, aromatic and full of nutrients because these are the only part of plants developed to attract humen/animals. The reason is that the plants are immovable and therefore cannot disseminate the seeds to distant places. The flowering plants during the course of evolution, therefore developed fruits with seed/ seeds embedded in fleshy part so that humen/ animals can pluck them, eat the fleshy & juicy part and discard the seeds at a distance for germination. Therefore even if plants have life, eating fruits help these living ones to propagate and this practice can't be compared with the choice of killing animals and eating them.
