They'll know that your phone was rooted if your flash counter is not 0 (boot into recovery mode to find out what your flash counter is). If your flash counter is not zero, then you need to download the app called triangle away in order to reset your flash counter (do this before unrooting your phone). Easy step to avoid tripping the flash counter? Don't flash a modified ROM through ODIN. They'll also know your phone was rooted if your phone says modified though. When you unroot, notice that your phone still says modified. You then have to boot into the stock recovery (not recovery mode) and then factory reset from there. Hardware,tracking is when the phone is in use only. And a mobile device can NOT be tracked when switched off.
