Will changing my default text color for emails make me look unprofessional?

Probably yes. You might be able to get away with it, if you change it to something really subtle like a very dark gray or blue (with the hope that people won't notice). On the other hand, if you change it to bright orange, it will look very unprofessional. People might even mistake you for a teenager (as teenagers are often obsessed with inconsequential forms of self expression).

How can you change the default font/color for outgoing messages in Yahoo mail? Or can you?

Yahoo doesn't allow us to permanently change their default fonts and colors.
You will have to continue changing it each and every time you use it.

HOWEVER-----(if your account has been updated)
This works for me-----try it.
Make your signature with the font and color you want your messages to be.
Your signature is automatically added to the top of your composing (forwarding/replying) page.
The message you type under it, will carry on with the font style, size and color used in your signature

Why are corporate emails in blue text?

There isn't a specific custom or rule to write official emails in blue font. Microsoft outlook is the popular choice for professional emails across corporates. And since the outlook uses blue font by default, you would see the majority of corporate emails in blue.
