As far as dining, your hotel is centrally located and you can pick & choose as you like. Sorry, I would recommend some places but I don't know what you like and Houston has it all.
If the consierge at the Derek doesn't know about what you are interested in just call the St. Regis Hotel (formerly The Ritz-Carlton & is only a couple blocks away from your hotel) and ask for the consierge...he will answer all of your questions and you are getting a free service as they will presume that you are a guest there & are paying a fortune.
I know...dishonesty isn't good but you only have ONE weekend...Make the best of it and please don't think badly of me.

If you are a luxury-budget tourist and want to travel in style and spend a few days in each country, then you can do two to three countries in Europe in 10 days and with $5000. You can do South Asia with that money and time. Also South East Asian countries.If you are a budget tourist, I have known people traveling to six/seven countries in the European Union in 10 days with that amount of money. Except Germany, France, and Spain, most other EU countries are small.For instance, if you visit and see only what the capitals have to offer, you can do it in one full day in these small countries. For it, you can fly from home to Helsinki, take a boat to Tallinn (Estonia), take a bus to Riga (Latvia), and take a bus to Vilnius (Lithuania), fly to Warsaw, fly to Prague, take a bus to Vienna, a bus to Bratislava, a bus to Budapest and fly back home from Budapest. Most of these bus trips are less than five hours. That is 8 countries if you really stretch yourself, but six countries can be done easily. If you need a visa, just get the Schengen visa.You can do Paris, Brussels, Luxembourg, and Amsterdam with that money and time.You can also do the circuit of Hungary, Slovenia, Croatia, Bosnia, Montenegro, Serbia, Kosovo and Bulgaria by flying into Budapest and flying out of Sofia and taking buses in those short distances between capitals.Likewise Central American countries, but here you might have to secure visas from individual countries if you are not from USA, Canada, EU countries, Japan and few other countries.
