How long does cooked rice last in the fridge?

Cooked rice is a generally considered low risk food item. This is due to the low levels of protein contained in it. The type of bacteria that like protein rich environments are more likely to give you food poisoning than the type of bacteria that thrive on starch and sugars. It's a little more complicated than that but that's  a good rule of thumb.There are some good guidelines here: Storage Times for the Refrigerator and FreezerHowever cooked rice or something similar isn't really covered here.For home purposes, as Garrick Saito has stated, you can store rice in the fridge for quite a long period. Though the longer you keep it in the fridge the more you risk giving yourself food poisoning of some form. Also the quality of it will decline due to dehydration and natural decomposition.The main risk you have with rice are Bacillus cereus (aka "Fried Rice Syndrome) and the Aspergillus genus of mold species that love starch rich environments and can cause you serious pain and damage.In a professional kitchen all cooked food is disposed of after 3 days in the fridge. That is 3 days in the fridge continuously. Anything taken out left on the bench or reheated is disposed of at the end of the day/shift.Personally, I don't keep rice longer than 3 days in the fridge and when I do reheat it, I reheat only what is to be eaten, no more. Left over reheated rice is thrown out. Given that you can easily cook very small portions of rice and the relative low cost of it. I don't see the need to keep cooked rice for extended periods of time in the fridge. Anyway, there's nothing like freshly cooked rice, the aroma, texture and taste.
