Eating healthy at a Mexican restaurant?

My family is going to a Mexican restaurant for dinner Friday night. I have been on a diet for the last two months and I have lost around 30 pounds. Here's where I need your help. What are some of the healthier/lower fat choices that I should look for when we go out to eat Mexican? I know that I can get a big salad obviously but I would like something else if that's at all possible without going off of my eating plan. I have just been watching my calorie & fat intake. People are pointing at Paula Dean as proof that butter and fat are unhealthy because she has diabetes, of course they blame the butter and fat in her cooking while ignoring all the sugar and flour (carbs spike your blood sugar) and of course diabetes is a problem processing SUGAR not fat.

Of course, as in every bigger city.I would add following eating opportunities, which I use to visit and are my favorite places to eat:- "Farmarsky trh na Kulataku", Farmer's market place neighboring with Dejvicka roundabout. (I use to buy apple juice, herbs, fish, even unheatly but delicious smoked stuff :) this one is quite expensive, as it is not restaurant.- Thai Bistro (I love this bistro) - Red Hot Chilli - Red Hot Chilli - vietnamské bistro, delicious thai food. Be aware - open only working days till 19:00- Delicious Czech and Internation food by Krystal-Bistro (Restaurace KRYSTAL Mozaika Bistro) - each day they offer even fish, best prices are during lunchtime.- PORTO - most italian food - very good quality and various fish - Ristorante Porto- Indian food - Indian Restaurant in Prague - all you can eat (AYCE) for 140Kc. I agree, that AYCE is not healthy much. :-)Here are some others I plan to visit or haven't visited for long time:- Beas Vegetarian Dhaba on I.P.Pavlova (and others: Vegetariánské restaurace - náměstí I.P. Pavlova, Česká republika)- Sushi restaurants - Čerstvé a kvalitní sushi za skvělé ceny or příjemné posezení a výborné sushiI shop here sometimes:- Co je u nás nového - fresh vegetables/fruits, breads, ...- Potraviny za velkoobchodní ceny dostupné pro všechny - delicious italian, french even international ingredients.
