To play stopper you should be good at both defense and offense. You must be able to hold your own against attacks from the opposing team, but you must also be able to involve yourself in your teams attacks. To play sweeper, you should be good at defense, offense doesn't matter as much. You will most likly be in your half most of the game. Height doesn't really matter. Speed, however, does matter.
