How To Make Our Wedding Cake Special

Chocolate wedding cake...?

Non-traditional cakes are becoming more and more popular and I've seen beautiful wedding cakes that have chocolate drizzled on them with strawberries. Just stunning, and very memorable.

I personally do not know anyone who CANT eat chocolate. Some people monitor their caffeine intake, but there isn't that much of it in chocolate.

To ease your mothers worries, why don't you get the cake you and your fiance like, but get an inexpensive white sheet cake which can be kept in the back and cut and served at the same time as your decadent chocolate strawberry cake. You can get a large sheet cake for $20, and if your mother is anything like mine, $20 is a STEAL if it gets my mom off my back :)

Where and how much are wedding cakes?

We have about 75-80 people also and our cake will be $300.00. Sounds like a lot, I know, but it's three good size layers, a small topper layer on the side for us to freeze for the first anniversary, and they deliver it to our site and set it up for us...no worries about a ruined cake on the big day when I am going to be busy with everything else!

Plus it tastes sooooooo great!!!

Go to a bakery and ask for lots of samples...take your fiance with you because this is one part of the planning that he will LOVE to be a part of, LOL! ;-)

Can I get a refund for my Ugly Wedding Cake?

For my wedding cake, I ordered a cake that had 3 tall and narrow plain white fondant tiers with a single large magnolia flower and silver ribbon at the base of each tier (photo 1). The cake I got on my wedding day was visibly slanted and had lumpy fondant and even the ribbon used was wrong (photos 2 and 3). When we initially discussed the cake, she said she each tall layer would really be two layers with a board in between for support. The cake we got on our wedding day did not have the boards and she said had to take it out because it left ridges around the cake. And then she blamed my cake tray (see photo 4) for having hallow centre for making the cake fondant lump up. She has offered me a $50 refund on my $300 cake and a $50 credit on a future cake. Not being a baker myself, are her reasons valid for delivering such an ugly wedding cake which was truely disappointing to us on our wedding day? Should I ask for a bigger refund?

What was your wedding cake like?

Strawberries and Cream. Hazelnut Almond. Chocolate Cappuccino. Caramel Apple. Red Velvet. Lemon Berry. Ginger Spice. Chocolate Raspberry…There were too many choices, and the huge list of fancy cake flavors was making me dizzy. Picking just one was excruciating.And that was just the tip of the iceberg. The entertainment.It was an endless laundry list of items and details we had to plan for the wedding.After visiting venue after venue and reviewing an array of potential vendors, I was seriously ready to elope.And we almost did. But I knew our families would be really upset.So we ended up abandoning the idea of a traditional wedding and opted for a cruise wedding. We narrowed our guest list to our immediate family and closest friends, less than 20 people in total including ourselves.The pages and pages of vendors and choices were replaced by a simple sheet with a few checkbox options. Fondant on wedding cake, yes or no?

Fondant is expensive and no one eats it. Most folks can't stand the taste or texture of it so it's a waste of money on the bride's part since it goes straight into the trash. People remember whether the cake tasted good or bad, not what it looked like.

Edit: Buttercream does not have to be refrigerated and most bakers agree. Just keep it in a cool area. If you do stick the cake in the fridge, it makes the cake itself start to sweat.

How do I tell my mom I dont want her to make my wedding cake?

My mom took cake classes about 15 years ago, so needless to say, her style is seriously out of date. She made my sisters wedding cake 12 years ago, it was nice... But very dated and not what I would have wanted. Now, 15 years later, she only makes cakes for family, friends, or office events. Shes SERIOUSLY out of practice, her skills just arent nearly what they used to be. In addition, I would really like a clean lined fondant cake and she refuses to work with it cause she doesnt like the way it tastes (even though it can be removed and buttercream is underneath, then it tastes normal).

I know it would mean alot to her to make both of her daughters wedding cakes, AND it would be a big money saver, but when she made a 3d winnie the pooh babyshower cake last month where all she had to do was fill in different star shaped blocks of color, it kinda worried me.

Should I just save the money and let her make the cake or should I do what makes me happy cause its my day and as a result probably break her heart, or at least insult her? I really dont know what to do. Is there a way to compromise? Is it possible to have her bake the cake (cause shes amazing at that! Her cakes are so moist and tasty, easily the best tasting cakes ive ever had) and maybe she could put the buttercream layer on, and then take it somewhere else to decorate it with fondont and other details? Will cake places allow that?

Yeah, yeah they do.Remarkably, it doesn’t get as stale as you’d expect. Things do really grind to a halt in the freezer. Staling is almost completely stopped.Freezer burn is more likely. That’s water slowly sublimating out of the food, which is actually the opposite of staling, which absorbs water. Buttercream frostings will freezer burn.If you wrap it tightly in plastic, freezer burn is dramatically reduced.
