There are many different antioxidants. There are different ways to test for antioxidants:

* You can test for specific chemicals. With tea, it's complex, because there are MANY chemicals. In green tea, most of the antioxidants belong to a class called Catechins. In black tea, they are mostly Theaflavins and Thearubigins. Testing for these chemicals is complex and difficult, and involves lab equipment and a lot of time.

* You can test for antioxidant activity of the mixture as a whole; there are different measures of this activity, and they sometimes produce different results. This testing is also very complex and involved and requires a lot of knowledge and lab equipment.

* You can also (this is the best way) give the tea to subjects, then draw their blood and test the antioxidant activity in their blood. This, of course, is even more costly and difficult!

Bottom line? This is a very tough thing to measure!!! You'll probably have an easier time just reading the scholarly literature that's already been done. And, if you're working in a lab and have the equipment and resources to do this, then, also start by reading the existing articles, because you can learn from their methods.
