Unfortunately, as others have said, it cannot be done. Apple only signs the current version of iOS. iTunes will decline to install any version of iOS that lacks the digital signature from Apple. That signature is only available on the most current version of iOS. There are some exceptions for older devices that cannot run the most recent iOS, but there is no known way to exploit those older device exceptions to get older versions of iOS onto newer devices.Back in the early days of Apple's digital signature strategy, it was possible to (figuatively) jump through some hoops while hopping on one leg and patting your tummy at the same time to trick iTunes and iDevices into accepting an earlier version of iOS - but only if you had already done some groundwork to prepare for the trick in advance. In the years since, Apple has tightened the signature process and eliminated the possibility of those kinds of tricks and charades.To say all this much more succinctly: The only version of iOS that you can load on your device is the the one that Apple wants you to use.

Im pretty new to android as I just got my HTC Evo last week. It came with several preinstalled apps, like facebook which are only v1.0. I know there must be updates or bug fixes but I can't figure out how to apply them because you can't uninstall them or anything. That's a trick question. If you want to keep your Cydia tweaks, but want to delete Cydia, just download "cydelete" from Cydia, the go to settings>cydelete>turn protect Cydia to OFF. NOTE:this method I would not recommend, because then your are stuck with those tweaks forever, and if your iPod touch starts crashing (springboard crash), then you can't delete those tweaks that are causing the error. If you want to be VERY CLOSE TO UNJAILBROKEN, download cydelete( IMPORTANT TO DO THIS BEFORE YOU REMOVE SOURCES)remove ALL sources, then delete all packages beside cydelete and the packages that Cydia starts you with (mobile substrate, essential, ect). Then delete Cydia (to use cydelete, just hold down an icon and click the x arrow on Cydia (cydelete adds that x)). Now all that's left are the Cydia basics(not part of Cydia) and cydelete. It's not what apple considers UNJAILBROKEN because it's still partially there (the leftover tweaks), but it will do if you don't want to restore. To totally remove Cydia, you will have to do a recovery restore. 1.) sync your apps and music to begin. (DO NOT CREATE A BACKUP(where you rightclick your iPods name and choose create backup). Backups store everything on your iPod, including the jailbreak. A sync syncs what you purchased). 2.) connect iPod touch to computer (with iTunes) and then turn off the iPod touch. 3.) now you must hold the power and home buttons together. RIGHT WHEN YOU SEE THE APPLE LOGO, release the power button, holding the home button only for10-15 secs until iTunes says your iPod touch is in recovery mode and needs to be restored. 4.) hit ok and click restore. Then, it will restore and update to the latest firmware. When the process is done, it's IMPORTANT TO CLICK SET UP AS NEW IPOD instead of restore from backup. 5.) then name it, sync purchases, and your done!

I am assuming you are talking about the iOS 10 beta upgrade. If u upgrade your phone to the beta or the ‘test’ version of iOS 10, u wont lose your data. Therefore, u can be rest assured of your data safety provided u take a backup to your computer.
