I Want To Make Truffles

Is it bad to have a lot of Chocolate Truffles? I had 5 and now i want a sixth.?

Drink a glass of milk or water, then opt for some strawberries, banananas, kiwi, or a light yogurt. By replacing chocolate, you can enjoy something sweet without eating too much chocolate, which can be fattening. I wouldn't eat the last truffle, but no worries! If you do, you won't balloon up! I promise (unless you ate McDonalds for dinner)...
Instead of a handful of chocolates every night, bake your own treats and eat (if you make cocoa cookies) one and then drink a glass of milk. Or, try some strawberries dipped in a little bit of sugar or cinnamon bread toasted with light butter.

How do truffles taste?

I'll tell you a funny story. I'm not much of a gourmet mushroom lover. I like common buuton mushrooms. So, the idea of spending a lot of money for something I didn't know if I would like didn't appeal to me very much.Then, Sur La Table had a salt tasting display one day when my son and I visited. They had a Merlot salt and a truffle salt.My son and I both tried the Merlot and liked it. It tasted very much like Merlot that had been poured over salt, and I could see using it as a finishing salt on maybe steak.The second my tongue tasted the truffle one, I gagged. I couldn't get that taste out of my mouth soon enough. It tasted like a combination of salt and moldy, muddy, dirty socks. Luckily, that store also had an espresso display and they gave me some of that.So the moral of the story is to try to find a resource to try it before you spend a bunch of money on real truffles. Most of the truffle flavor you see is not made from truffles at all, it's chemical flavorings. If you like the way the flavoring tastes, then by all means, get the real ones.

In 1890, 2,200 tons of truffles were found. Today, only 150 tons are found per year.One could make a fortune off of truffles, and some people have. Others steal them, or are hurt for them! As the hysteria mounts over this luxury, their desirability increases.But they are worth it. Here’s my suggestion. Buy some truffle oil that is certified that it is from Europe without Chinese truffles in it, and make mashed potatoes. It should cost you $10 total, and that way you can try it!

How do I harden up ganache for chocolate truffles?

okay ganache is so basic to make in the first place that you don't need a recipe for it. my recipe is from what i learned at le cordon bleu in london. the secret is to use very good quality chocolate, that contains at least 74% cocoa butter.

my recipe is you just need 2 ingredients: chocolate and cream (or unwhipped whipping cream). the measurement is equal amounts of cream and chocolate. so, if you have 500grams of chocolate, you need 500ml of cream.

procedure: cut up the chocolate into small pieces to make it easier to melt. then bring the cream to a boil over high heat, remember to keep stirring and never leave it, as cream can burn. then remove from heat and add in the chocolate pieces. cover with a cling film with the film touching the surface of the chocolate to prevent it from forming a skin. then let it cool at room temp. if it cools and remains liquid, put it in the fridge to solidify a bit. but you need to be careful, because a chocolate that has been in the fridge can melt at room temp - because it was not properly tempered.

If you don't make him vomit, you just have to wait it out. A few days ago my dog got into a present I received that included chocolate. She was fine - she's 13 lbs and it was about 3 saltine cracker's size of chocolate. I just watched her to wait it out. But, we've both learned that now we have to keep anything with chocolate/toxic to dogs out of their reach at ALL TIMES! :)
