Voldemort never drank unicorn blood through his face on the back of Quirrell's head. Instead, Harry sees Quirrell leaning over the body drinking the blood himself. During the graveyard scene in Goblet of Fire, Voldemort talks about how he still had the power to possess animals, but the animals all died shortly afterwards.I sometimes inhabited animals — snakes, of course, being my preference — but I was little better off inside them than as pure spirit, for their bodies were ill adapted to perform magic… and my pos- session of them shortened their lives; none of them lasted long….— Goblet of Fire, chapter 33 (The Death Eaters)It's likely that by drinking the unicorn blood, Quirrell was preserving his own life.Keep in mind that contrary to the movie, it wasn't Harry's attacks that killed Quirrell. He died because Voldemort fled his body:“The servant died when I left his body, and I was left as weak as ever I had been,”— Goblet of Fire, chapter 33 (The Death Eaters)Firenze was right, he really was only an inch from death, and it was only a combination of unicorn blood and Voldemort's power that kept him alive.Alternatively, unicorn blood was one of the ingredients in the potion that allowed Voldemort to take his weakened baby-like form before his body was fully restored. So it's possible that by drinking the blood, Quirrell was somehow allowing Voldemort to create a physical face.

I would make myself known as the greatest unicorn of all the land, and the first thing I would do is reveal myself to humans. Because humans love us so much and fantasize about us I’d OBVIOUSLY become worshipped by all. I'd get them all to trust me….LOVE ME…. and then we’d all attack humanity and take over the world I MEAN WHHHAAAAAAT???? I loooove huuuumaaaaaans.

Why doesn't Lord Voldemort have a nose?

There are two things about Voldemort’s Nose.When Voldemort killed the Potters, he still had his original body, that of Tom Riddle, and though his looks would have been distorted then because of the creation of his Ho-cruxes, he would still have had a nose at that time and would not be as snake-like. He lost his original body when he tried to kill Harry and the curse rebounded on him.The body he has now, with the snake-like features, and as everyone is so focused on, lack of nose, was created later through a potion and looks the way it does because it was magically synthesized. It is likely as snake-like as it is because Voldemort fed on snake venom, and largely incorporated his snake in the task of building himself a new body.Voldemort's appearance became more snake-like as he delved deeper into Dark Magic, and his face became more serpentine, which would presumably explain the flattening of his nose. Mention of Voldemort's serpentine appearance is mentioned in every book. It's theorized that each murder Voldemort committed, the more distorted his face became. There is a scene where Dumbledore shows Harry a memory of Voldemort after he resurfaced after being gone for ten years. He came to hide the Ravenclaw Horcrux and to ask Dumbledore, who was newly appointed headmaster, for the Defence Against the Dark Arts position, and his appearance is drastically changed (this would be been around circa 1956) from when he had gone to work at Borgin and Burkes ten years prior. It's fair to speculate Voldemort was deeply involved in Dark Magic; Dumbledore notes that he hopes "half of what he's heard (about Voldemort's Dark Arts activities) isn't true."Regarding the movies, super short answer: CGI removed Voldemort's nose. There's a segment in the extra scenes where Voldemort's nose is discussed extensively. Ralph Fiennes was very opposed to the flat nose and had to be convinced of the scary aesthetic value of that choice.
