For most people, no. The longer answer is that one could certainly eat too many egg yolks much in the same way one could eat too much of just about anything.  An awareness of what's in an egg yolk should inform a personal decision of how many is too many.A few reasons one should eat the yolks are that:They have the overwhelming majority of vitamins and minerals in the egg.They have a significant fraction of the protein as well.They are by far the more delicious part of the egg.The reasons I hear most for why one should not eat yolks are:They have all the cholesterol.They have all of the saturated fat.The relationship between dietary cholesterol and serum cholesterol, as well as the relationship between HDL and LDL levels with coronary heart disease appears to me, a layman, to be a quagmire of conflicting published research.  Some people say that eating more eggs has little or no correlation with an increased rate of coronary heart disease.  Others argue that eggs would be a dangerous addition to one's diet for somebody already suffering from cholesterol related problems.  Personally, I eat a lot of eggs.  So far, it would appear my lifestyle and habits accommodate a relatively high rate of egg yolk consumption.  However if, for example, you have diabetes or a family history of heart disease or some other condition that would be adversely affected by an increase in dietary cholesterol, then perhaps for you the answer is that egg yolks are indeed bad for you.

You should be eating 1 or 2 eggs (whole eggs) each day. If you are like some of the lunatics that buy into this cholesterol in food thing, please understand that your liver adjusts the cholesterol production to maintain a balance in the body. If you eat very little cholesterol in your diet, your liver just makes more to compensate. If you eat too much cholesterol containing foods, your liver just makes less to compensate. Only 15% of the cholesterol you get from foods ends up in your body, the other 85% is made in the liver. Every cell in your body, all trillion or more of them, has cholesterol in the membranes along with fatty acids. All your steroid hormones (including all sex hormones) are made from cholesterol. All the bile is made from cholesterol. And cholesterol is what transports fatty acids through the body and is a major factor in the healing process.

The tuna you eat should be the chunk tuna from small fish. Those small fish contain far less mercury than the larger tuna fish. A good fish to eat is salmon because it has very little to no mercury in it.

The mayonnaise is the PROBLEM HERE. If it is made from soybeans or canola, you are getting the booby prize, genetically modified oil. 93% of soy and 85% of corn is now genetically modified in America today without any labeling. The proteins have started mutating and with gene transfer in the gut, your intestinal flora could become pesticide factories. You need to make your own mayonnaise or buy organic, NON GMO, made from oils other than soy or canola.

Eat lots of whole eggs and fish that have the least mercury or ones that have none like salmon. Beware of the genetically modified salmon the FDA is wanting to allow despite the many warnings of well known scientists that care about our health. The FDA is a complete useless joke. The food CZAR is none other than Michael Taylor, the ex-monsanto vice president and attorney that has declared genetically modified foods SAFE so NO TESTING and NO LABELING is required in the U.S. like it is all around the entire world that has seen the testing and damage it does to people, animals, and the environmental diversity.

Is it healthy to eat omelettes for breakfast every day? If not, what are the negative health effects?

In my opinion, the source of the egg and what you add to your omelette makes the difference between healthy and unhealthy.Eggs from free-range chickens, meaning hens that spend time roaming outside and foraging for food for at least a good part of each day, are better for you than eggs from caged hens.  Free range hens produce eggs that are 1/3 lower in cholesterol, lower in saturated fat, and higher in vitamins and omega 3's.  (Welcome to the Chicken and Egg Page)  Some sources would contest this, but common sense tells us that a chicken with a better, more natural diet and lifestyle would produce better eggs.  The problem is that most of the eggs in the store (in the US at least) that are labeled "free range" still come from hens that have never had access to foraging space.  If possible, buy eggs from a local farmer or even someone with a backyard flock that has chickens that roam where they please, eating what they like in addition to a quality, plant-based feed.  If you haven't had eggs from pastured chickens, you don't know what you're missing.  Last year, I started buying eggs from a small backyard flock down the street.  Even my kids immediately noticed a difference in the taste of the eggs; they taste better and the yolks are a much deeper color.  It inspired us to raise our own chickens!Once you have eggs that are good for you, add some greens or other veggies and cook with a bit of real butter rather than cooking spray or processed vegetable oils.  Those things are horrible for you.  I like to add some baby spinach, red peppers, and onions to an omelette.  A high protein breakfast is a great way to start the day.
