Full-Time Student (18 units): Should I quit my part-time job? How can I do so without burning bridges?

Last year I started working for a restaurant, 25 - 30 hours during the school year. Huge mistake. I didn't realize how hard working and studying would be. Only a freshman, I was working nights and weekends, constantly staying up late and going to school the following morning. I struggled to balance working, family, and school. My body even developed a physical reaction (seborrheic dermatitis) due to stress. You get the picture.

I am starting my second year of college next week. I told my boss I needed her to cooperate with the fact that school is my priority, but she said she still needs me on all these shifts. My dad told me I need to give my two weeks notice if they won't work with my needs because the business is their problem, not mine. My mom said I shouldn't quit until I find a new job.

The reason I need some kind of income while in school is because I pay for my own tuition, books, car insurance, gas, and self-care expenses (dentist appointments, visit co-pays, etc.) So yes, I need at least a part-time job. But I can't be somewhere that doesn't respect the fact that I am a student.

I am really torn. I know I could find another job, but I just don't want to burn bridges. Campus jobs are great because they are usually no more than 15 hours a week and they allow a great balance, usually no nights and weekends. But if I quit, I will always need to find work during breaks. Help! What would you do?

absolutely yes
but there are a few points to consider when doing double jobs like many others:

at your primary job you need to be on time and do a good job,
if you are tired there or late or missing frequently because of your second job, you may get fired

officially you may need to ask permission from your primary employer if you have any restriction in your contract. if so, explain why and a good employer will agree, a bad = change job

if you have NO primary full time job but plan to go 2 jobs
then tell each of your employer that you have a part/full time job and that THIS one will be your second

the reason why ppl do double jobs usually is that they earn far too little and often even far below legal minimum salary. in latter case an employer has NO rights to deny a second job at all.
sometimes an adjustment to the minimum legal wage may help to prevent the need of double jobs, however the procedure to make employers do what they are legally required may be lengthy and costly until all legal minimum back wages are paid out

hence the first step to care for is to chose an employer who pays at least legal minimum or more, in many cases that may solve all your financial problems and may make a second job obsolete, all people on earth are entitled to a honest descent salary that allows a life in dignity and freedom.

often if you have a good job, your employer may agree to let you do paid overtime to replace the need for a part time job.

another important factor is to reduce expenses for housing and travel to and from work - that is where many spend majority of their salary.

first save where possible before doing double jobs

Is it wrong that my Girlfriend doesn't want to get a "real" job?

You knew she didnt have a full time job when you met her. It is perfectly normal for her to not want a normal job when her parents supported her and now you have taken her in and let her expect you will take care of her.
If you had a problem with her not working a full time 'real' job then you should have said something BEFORE you had her move in with you. I suggest you have an immediate conversation that you have a problem that she isnt working a regular job. Tell her what you expect. If you need or want her to start contributing to the bills then say so right now. And if she wont get a job and you are not ok with that then break up with her and tell her to leave (you dont have to give her any notice to kick her out if she never pays rent or pays any bills in your house).
Otherwise you should know she has made it clear she doesnt plan on working, except writing and probably never will be a successful author because it is hard to get a book published.

I dont get any breaks, can I sue my Boss?
