Sorry, but your question shows a misconception. There firstly are no easy or hard countries to apply to since they all follow the same regulatory provisions and secondly you do not have a choice where to apply but must address the application to the Embassy/Consulate General of the country which either is your main destination or the first port of entry if no main destination exists.
