To answer your questions: without being married your partner won't be able to sponsor you. Means you need to find employment BEFORE relocating in the UAE and living with your partner.*
To find a suitable job opening you have to look online and check various recruitment agencies. When hired your employer will provide you with an employment entry permit, Airfare and will take care of all necessary work related issues. All fees, etc have to be paid by the employer only and aren't deductable from your salary.
Employment as a teacher is possible only if you have the necessary degree. Otherwise you may work as a teacher assistant only. Social work as a non Arabic speaker might be possible in any hospital/clinic or any British organization operating in the UAE. Don't know if such an organization exists, sorry. You have to google for this.

You do not have to cover up, you won't automatically seen as a maid because of your skin complexion and your fear regarding treatment is unnecessary. Don't waste your time:)

*Also when it's illegal for unmarried couples to live together, Dubai turns a blind eye on things like this as long as nobody complains. Put a ring on your finger and keep a low profile regarding your martial status. As a UK passport holder you'll get a visa up on arrival valid for 30 days which extendable for another 30 days against a fee of AED 500. Then you have to leave the country (visa run) and enter on a fresh visa. You can do that as often as you want to but you won't be allowed to work on a tourist visa. Also you'll need an IDP to drive a rent a car and won't be allowed to drive a private vehicle. While on a tourist visa you won't be able to open a bank account and you better don't get pregnant while being unmarried.
