Yes, ofcourse.But always remember that you will have to follow the standard hierarchy of Levels of access with your Experience.Except MNCs there are very less companies which gives full access(L3) to Freshers on vMware and Citrix Infrastructure, because the site may in Production and your one mistake could cause outage to multiple users or site.Industry has been divided into 3 usual Escalation levels of administration access: L1, L2 &L3 .So as you are Fresher, you may have to start with Technical Helpdesk or L1. But you will get a lot to learn following this correct learning path.Gradually you will be promoted to L2 and L3 as per your performance. Which course I need to do? Vmware or Exchange Server?

At an absolute Minimum I'd get familar with VMWare Server (the free VMWare download that you can use to host multiple VM images on your own computer). I use that extensively for testing and running various operating systems. - That will let you play with many of the vmware technologies and use it to host whatever other os installations you might want to play with (including Exchange) without needing to reinstall your host os each time.

Personally I think exchange is far too bloated and based on a design that is stuck in the 1980s. If it were me I wouldn't waste time on Exchange Administration at all.. VMWare; Cisco, Linux or Oracle/SAP/ would be better choices in my opinion.. If you did want to choose a Microsoft Technology I'd look closer at Sharepoint over Exchange.
