How much do young actors get paid?

Pay scales really don’t follow an age scale. If you are talking about a Screen Actor’s Guild (SAG)/ AFTRA film or TV production, actors are paid according to the contract regardless of age. An established actor, also regardless of age, can be paid above scale meaning more money. So it really isn’t about an actor’s age.All that stated, a new actor, regardless of age, may make only a stipend if they work on a student or independent film.

When is a good age to start an acting career?

Great actors rarely have started in their teens. They may have done some small theater or school productions, but most start in their early to late 20s.
It bothers me that you have this dream, but you are laying blame on parents and the town you are living in. More actresses come from small towns in mid america than any where else.
Quit blaming and start taking full advantage of the Salt Lake area.
Becoming an Actor/Actress
Find every opportunity in your traveling distance that does Plays or Musicals. Check the schools and community groups as well as professional. Contact them and ask to be notified of any auditions.
If you do not get a part, offer to help in any way (paint scenery, usher etc.) Just being around the production you will learn a lot.
Study Dance, Music and Acting. You must be able to do at least one great and the others well enough to let the others work around you. Find classes or instructors that have produced talent.
Work on your image. You have to be a go getter, with lots of confidence and at the same time come across as humble.
Develop work ethics. Never be late. Never be absent. Always be attentive. Always show respect for others, even when you do not think they deserve it.
If and when approached by a talent agent or agency. Check them out carefully. If you are too young to sign a contract, remember your parents will need to be very involved.

Maybe.I’ve heard the number thrown around that a good actor can book one role for every hundred of those auditions.That's if you're lucky. And marketable. And talented. And personable. Why do 18-21 year olds act more like kids/teens than adults?

According to the law (at least in the US), you become a legal adult when you turn 18.According to the fact that biology and life doesn’t work that way, you do not immediately lose all ‘childish’ tendencies the moment you turn eighteen.I will not stop enjoying the playful banter of my friend and I as we spend the entirety of fifth period roasting each other just because I turn eighteen. Will I get tired of it? Possibly. Will it have anything to do with the fact that I’m legal? Nah.I will not stop sneaking up behind another friend and waiting until she turns around, sees me, and jumps in two years just because I turn eighteen. That is much too simple a joy to be an adult habit, obviously, but it’s because it’s so simple that it makes me laugh so much.Y’know, a fairly common complaint I hear about schooling in the US is that from the time you enter school in pre-school to the moment of your graduation over twelve years later, you need to ask for permission to use the bathroom.
