I'm going to get a job and I know I could pay my parents the money to keep me on their plan, but I don't think they will do that.

You would need to contact your network provider and explain that to them. When they send out a new SIM they leave it deactivated and you need to contact them and ask them to activate your SIM card against your mobile number - or against a new number. If you give them a call they will sort you out. Depending on what network your on the length of time to activate the SIM will vary - though it usually only takes 10-15mins after you hang up the phone.
