a resume' is a highlight film not a documentary............
you only need to list jobs that were relevant to the job you are applying for. you also need to consider the format of your resume' instead of focusing on employers and dates focus on education, training, certifications and your job skills and minimize employment dates.
padding of resumes is common and is not illegal as long as the padding does not include false claims of certifications or licenses that are relevant or required for the job.
leaving off information is not padding it is simply an omission.

an application is a legal document and most state that omissions or untruthful answers are grounds for immediate termination. if an application ask for all employers in a set time frame then do not lie because if discovered it could come back to haunt you.

the thing you must do is make the "bad" parts of your past irrelevant by focusing on the good. from every experience in life there are lessons to be learned. regardless of why you lost a job there was something that could have been done different and there should be something you learned from the experience. put those lessons and that experience together and show how they have made you a better person and potential employee. show how your past makes you the very best applicant for any job. use what you have learned and make it a positive for you and the potential employer.

As other responders already stated, the data is needed for tracking purposes in an attempt to monitor if there is any discrimination occurring in the hiring process.   The accurate collection of this data is even more important to minority/female candidates because they are the ones the law was put in place to protect and support.   If you don't complete the form you will contribute to an under reporting of your ethnicity etc. and this may allow discrimination to occur undetected because the data won't be accurate.  Most application processes are completed online these days and the systems are set up so that a hiring manager is not able to compare an applicant's ethnicity data with their application.  As an HR professional, it has been my experience that most hiring managers have no interest in looking at that data.   As someone else also already mentioned, the hiring managers will get more clues from the applicant's name and resume information than they would from the EEO form information.   And so, even if they were trying to discriminate they wouldn't start by attempting to review their info.  Now for the controversial part of my answer.   If I was attempting to land a job and I had an ethnic sounding name I would use a plain sounding nickname on my resume and application and would not share my real name until hired.  If my name was Jose I would put Joe.      Muhammad; I would be Matt.      I realize this may not be the right choice for everyone, but from a strictly utilitarian perspective of trying to maximize your opportunity to land a job, reducing the total number of possible reasons to be rejected would be my goal.  So I wouldn't refer to my religion, my politics or my ethnicity in my resume.     In this way I would at least increase my odds of getting an interview and have a shot to make my case for why I am the right person for the role.

I'm filling out a job application for a local supermarket and there is a question on it that asks "If you could have the ideal job that would make the most of your unique talents, what would it be?". Do they want the answer to be any job that would suit me in general, or in reference to a potential job AT the supermarket? Meaning of present appointment?
