Every restaurant is different and it is up to the owner/manager to decide. Some pool tips and divide them between everyone who works there at end of shift. A % is given by the restaurant for each staff member depending on position, which is used to determine the amount that goes to each. Some keep all their tips and since cooks are paid a larger wage none goes to them, unless a customer insists on tipping them. There may be other methods employed, but I don’t know them.Make sure to always tip in cash and that your server gets it not another person who may steal it, including the owner/manager. This is rare, but does happen. The reason for cash only is somewhat the same, if you pay by credit card, the owner now has the tip, and may keep it, drumming up a reason such as, “this is for the glasses and plate that you broke”. Of course most are honest and cash out the tip for the server.

How much should a waitress tip the cook & dishwasher?

I would quit. The cook and the dishwasher make at least minimum wage. In most states servers do not. The tip is to bring up the low pay scale for servers. I would refuse to tip out the cook and dishwasher. I would explain my position and quit if necessary. They are your tips. Your tips are your income.

If you were to tip them out, shouldn't they tip you out for being the middle person between the kitchen and the customer? Or for bringing the plates to the dishroom?

Cashier/Server/Busser Tips.?

I am a cashier, server, and I bus tables too. After a night of work, I always like to share my tips. I usually divide it equally. I divided my tips among myself, the cooks, and the dishwashers. There are 2 dishwashers and 5 cooks. After calculating the division of tips, we all get $2 each. I gave $2 each to everyone, and the last $3 to the main cook. I feel really bad that I was only able to distribute $2/$3 to them... I wonder if this is okay? Do you think they were okay with it? None of the other servers/waitresses tip them.

Went to hibachi place last night. Tipped our waitress well.. But not the hibachi chef. And now I feel kind of bad, b/c I had so much fun and he was great.. What's the custom? Is the waitress gonna split the tip with him?

Are there any restaurants where BoH staff also get a share of the tips?

It is common practice in areas where management doesn't feel like properly paying their staff.It is regular practice in most places on Maui. I'm not saying that the places that don't distribute tips are better run.It is common practice in many areas. A friend in Colorado told me it is common there.It is also illegal. Whether or not it is right or fair is a long complicated question. For the most part, it is my opinion that tips are the least efficient way of dealing out income, along with investment dollars, and commission. Again, long long conversation and not entirely applicable to every market.

How come dishwashers don't get tips but waitress and chefs do?

Yes, like has been said above, this is a loaded question! No matter how you answer, somebody's going to take sides.

Going back to the origins, tips were given to servers and servants, in gratitude for their good work. Until quite recently, it was common practice to leave a coin on the dresser of your hotel room, for the housekeeper (maid). Today, if they find money anywhere in a room after checkout, they have to turn it over to management as lost-and-found! You tip the hotel doorman, the Red Cap, the railroad conductor and porter, the shoeshine boy, and the paper boy. People would tip the mailman -usually at Christmas time, and stage performers tipped the stage hands.

At one time, some customers could actually go through the restaurant's kitchen, tipping members of the kitchen staff -including the chef and the dishwashers. Today, it's practically expected that each and every customer MUST leave a tip, and sometimes even if the service is terrible. In a swanky place, the head waiter usually gets his tip when you enter, to assure good service. Some diners add their tip to their charge card, or add it to the bill when they pay. Others prefer the traditional method of leaving the tip on the table. They can see and interact with the waiter or waitress, and they know the chef or the cook prepared their food. But the dishwashers and janitors, being on the bottom rung of the restaurant hierarchy, are "out of sight, out of mind."

In some cases, the wait staff do -or are required to- share their tips with the kitchen workers. Sometimes they all dump their tips into one big pile, and someone is appointed to count it all and divide it equally among everyone there. But this is a case where everybody is paid equally. Usually, no matter what they are paid, the dishwashers are not included in the "tip pool." They also often get yelled at and ordered around by the wait staff, who feel superior to them. But if the dishes don't get washed, the whole operation can grind to a halt! In food service, EVERYBODY is important, and should work as a team, tips, salaries, or wages aside.

Do restaurant dishwashers get tipped out too?

In many places it is illegal for the back of house to participate in tip pooling. This is not everywhere, and it might be in the servers best interest to do it anyway. This would only be the case if the dishwasher was also a busser or had some influence on the flow of service. Otherwise, the dishwasher would likely be among the last people to be thought of for any tip out.The reason some places have chosen to forbid it is that if an employee is counted as “tipped” in many places, they can be paid a reduced wage up to half of the minimum wage. This can encourage owners and managers to divert larger portions of the tips so that they can pay less in wages. Generally, people think of tips going primarily (but not necessarily entirely) to the ones directly providing the service, and so most of the time, dishwashers earn an hourly rate at or above minimum wage, but are not tipped out.
