Well, there must be a reason for this throwing up. The answer to that for me is always, ALWAYS, a jacket potato drowning in cheese and butter. I discovered at 12 that I am intolerant to both cow's milk and potatoes, among other things. Not to mention I have a waistline I proudly maintain!I grew up in Nottingham, England, where vans peddling delicious, hot potatoes with a variety of toppings parked day after day in every square, come rain or shine. In winter I would walk, shivering, through icy streets to where the local van sat, lit up like a glowing ember. In summer I waited to the side, slightly away from the veritable furnace that shimmered with heat as men sweated through their shift, toiling to deliver my cheesy puddle of carbs and goodness.And it was always cheesy! Baked beans for the lady? Not today, thank you! Tuna mayo, perhaps? Nay, say I!!! What about coleslaw?! Surely you'll try something, anything, other than mountains of melty, oozing cheese?! Well sure… if that something is more butter or more potato.What makes it so good? The potato is baked for hours, and throughout the day continues to get only softer and fluffier inside the firm-verging-on-tough skin (or jacket). The insides provide deliciously fluffy, reassuringly solid forkfuls, each enrobed in mild, savoury, soft, stringy puddles of cheap cheese. True comfort food. The last third becomes a buttery mush - extra cheesy and therefore extra delicious. At the end, when the skin has soaked up butter, the sides will be soft and fragile while the tougher bottom will be like a thick, freshly fried crisp. Use the sides to scoop up remaining bundles of cheese and potato, but pick up the bottom and eat it alone for a satisfying closure to this gastronomic chapter in your life.Like that, but more cheese (and butter). I don't like overly greasy food, but the starchy potato stops it from leaving an off-putting smear in the mouth. I have never, not ever, had leftovers. Will I ever have it again, as opposed to poor a imitation of sweet potato and goats' cheese? Who knows. I hope so…
