Songs are greyed out when your ipod wants to sync them to into the device but it couldn't, perhaps got interrupted and ejected before the device finished syncing. Best way to fix this is to delete it from itunes, deleting stuff from your device directly doesn't make it permanent and will try to make it's way back in when synced with a pc.
