I'm not sure, but I do have a theory. Maybe the songs that won't play were imported to your computer from CDs that aren't available on iTunes. Like, I have a song called 'Love Song Requiem,' by Trading Yesterday, but the album isn't sold on iTunes. Perhaps the iTouch won't play songs that that, while Nanos will?
Songs on ipod touch are greyed out and won't play?
Songs are greyed out when your ipod wants to sync them to into the device but it couldn't, perhaps got interrupted and ejected before the device finished syncing. Best way to fix this is to delete it from itunes, deleting stuff from your device directly doesn't make it permanent and will try to make it's way back in when synced with a pc.

When I plug my 15GB Ipod into the USB drive, my itunes doesnt download the songs into the Ipod. The screen says "Do not disconnect" but nothing seems to download.
