As a waiter, when a customer ask for menu suggestions do you suggest your favorites or the expensive items?

I really suggest my favorites.Yes, I am there to make money, but I think the best way to make money is to do everything I can to make sure that the guest is really blown away with the food and service, leaves happy, and comes back often. I will suggest the items that I personally think taste the best and have the best value for their money.I often suggest the “mix & match” option on our menu that lets the guest pick 2 entrees instead of 1, but smaller portions. A small filet mignon with chipotle crema and cotija mashed potatoes paired with a half lobster tail, herbed butter and delicious home style Mexican rice for $35? In Newport Beach, California, mind you. Or how about lamb chops with mole negro sauce, mushrooms and asparagus paired with that lobster tail? I dare you to not be happy with that deal. Is it the most expensive choice on the menu? Not by a long shot. But it’s yummy and satisfying and showcases the chef’s strengths nicely. I would offer to pair their entrees with wine recommendations, and for those I generally stick with mid-range wine because we have some bottles that are very, very expensive.It’s short sighted to recommend the most expensive items on the menu just for the sake of getting their bill to be as expensive as possible. Plus, people aren’t dumb. They’ll probably catch on if that’s all you’re doing and they won’t appreciate you trying to play them.

Side dish suggestions to go with Ginger Plum Pork Chops?

I'm making a new recipe tomorrow, and I need a good side dish to go with it! Here is the recipe to help you out:

Ginger Plum Pork Chops recipe

Ingredients:
1 teaspoon of vegetable oil.
4 boneless pork chops, 3/8-inch thick.
8 oz (1 jar) of plum preserves.
2 teaspoons of ground dry ginger.
3 tablespoons of cider vinegar.

Preparation Instructions:
Heat the vegetable oil in a non-stick skillet over medium-high heat.

Brown the pork chops on one side, then turn.

Stir together the plum preserves, ginger and cider vinegar, and add to skillet.

Cover the skillet, lower heat and simmer for 5 minutes.

Serve as desired.

What are some good dishes to serve with focaccia bread?

I'm a tiny bit behind the times but I'm adding my mum's old recipe/serving suggestion as I came here to figure out what to do with the leftover bread from this dish after numbers changed last minute.We've always called it posh cheese on toast!Create a simple tomato sauce with a little stock, white onion, garlic, chopped tomatoes and cayan pepper.Lightly grill a focaccia bread (preferably one with a lot of vegetables cooked into it) for 5 mins, then add mozzarella cheese and turn up the heat until the cheese melts.Serve bread on a bed of salad made primarily of peppery leaves (rocket is good but mix it in with other leaves or it gets overwhelming) and red/green onion. Pour sauce liberally.Garnish with smoked streaky bacon strips, black pepper and extra salad leaves.This will generally take less than 15 mins to prep with pre-made bread (we freeze it after massive baking sessions and the toasting negates any damage). Portion sizes can be altered easily with bread as you main limiting factor.

What are good side dishes for chicken pot pie?

I'm guessing your pot pie has potatoes as well as veggies and chicken like most due. If so, then I consider that a one pot meal like stew. So cornbread or rolls and a salad is what I would serve with chicken pot pie. If your pot pie doesn't include potatoes, then add the mashed potatoes or make parsley buttered potatoes along with the salad and bread or rolls. The mac & cheese would be too heavy with pot pie, even a small serving.

Easy - Potato chips and pickles
Med - Fried baby potatos and shallots
Hard - Steamed spinach or asparagus (don't over steam!!!) with homemade sweet potato fries and horseradish dipping sauce

There are only three acceptable things to serve with gumbo. And if you need a good recipe for a chicken gumbo, look for Paul Prudhomme's chicken gumbo. There might be a youtube on it.Long grain white rice. WHITE rice. Mahatma if you can find it. I prefer a lot of rice and less gravy in my bowl.My potato salad. I prefer it in a saucer on the side. Some prefer in the gumbo. A cajun potato salad is made with red potatoes, mayo, mustard, pickle relish and sprinkled with paprika.Garlic bread but not the prepared one you find at the grocery store. You have to make the spread yourself. Italian bread is an ok substitute.For dessert, bread pudding with a whiskey or lemon sauce.Oh, I almost forgot. I don't care for okra in a gumbo but some people do, so if I'm having company, I'll smother seasoned okra (slices) and simmer in some of the gumbo gravy and my company can have whatever they like.If you're having company and you want to put on a "spread" then as appetizers you can make shrimp or crawfish croquettes. However, remember, the star of the show is your fabulous gumbo.Also - I don't mix seafood with chicken, and I would never put crawfish in a seafood gumbo. Just blue crab and shrimp. And of course I would use a good smoked sausage.

you pretty much got your meal there.. if you want some meat go with perhaps some sausage or even some chicken breast fillets... a nice bread or rolls and your good to go

Depends on how much cabbage you put in them as to whether sauerkraut is a good idea

Pickled beetroot works well. Or you might consider boiled carrots, boiled potatoes and onion gravy if you serve them hot.
