Not all Bacteria die at same temperatures because each bacteria has:a maximum growth temperature .an optimum growth temperature , mean the temperature at which grow and .multiplya minimum growth temperature .In general , Bacteria can be arbitrarily divided into three groups on the basis of the temperature requirements:psychrophilies cold loving bacteria can grow will at temperature bellow 20 C ,optimum growth range is 10 C to 20C.Mesophilies Bacteria liking moderate temperature have an optimum growth temperature between 20 C and 45 CThermophilies bacteria liking higher temperature can grow in temperature above 45 C optimum growth range 50C to 60 CSome bacteria maybe able to resist the effect of high temperature although they are not thermophilic ; these are referred to thermoduric resisting microbes similarly organism capable of surviving very low temperature , although they are not psychrophilic ,are called psychrotoc cold tolerant bacteria such as monocytogenes.So if you want bacteria to be killed you should offer environment that has a heat temperature much above or bellow the maximum and minimum growth temperature range .Generally , Pathogenic bacteria is a mesophilies Bacteria their range is between 4 C to 60 C .Temperatures below 4C will not kill pathogenic bacteria but will not allow them to multiply enough times to cause an illness. Temperatures between 60C and 74C may not kill pathogenic bacteria but will not allow them to grow. therefore you can see Pasteurization is not able to get rid of all bacteria as sterilization .

At what temperature do you roast chicken?

Lilly, there are two schools of thought on this. The first school says to place the chicken into a pre-heated oven of 450 - 500 degrees for 10–15 minutes to allow the skin (which you have sprinkled and rubbed with olive oil) to gain a more roasted look. Then you turn down the oven to 350 - 375 for the remainder period of cooking as determined by taking the internal temperature of the bird by placing a thermometer into the breast without touching a bone and the reading is 165 degrees and if you slice at the joint between the drumstick and the thigh, the juices in the chicken that will emerge are clear, not pink. If you cook the bird following this school of thought, it may be completely cooked within 45 -55 minutes. Again check the temp and whether the juices are clear.The second school of thought is to place the chicken into a 350 - 375 degree oven and cook it at that temperature, which, depending on the weight of the bird may take more than an hour.It is interesting but you’d think roasting a chicken would be easy, but it really takes practice and you also have to take into account whether you live in a high or low altitude region, and what season of the year it is as both impact temperature.One more thought I had would be if you spatchcock or butterfly your whole chicken using a poultry sheer you can also cut down the amount of cooking time as the bird will lay flatter in the roasting pan instead of a whole bird. Remember the heat flow in the oven is not entirely even in a conventional oven so legs and thighs may not be cooked as fast as the breast portion. If you use a convection oven that has a fan in the back of the oven, it will spread the heat more evenly and the time to cook also declines.There are many variables to take into account, but this should help you figure out what may work best for you.
