Why am I suddenly allergic to apples, pears, almonds?

The apple is a major player in an allergic reaction known as Oral Allergy Syndrome (OAS). Apple allergies are most often associated with "birch pollen," which accounts for up to 90 percent of the apple allergies within North America and northern Europe. Because apple allergies are centered on pollen, almost all apple allergy reactions happen after eating a fresh piece of apple (especially with the skin) or other members of the Rosaceae family of fruits, which also includes the peach, pear, and hazelnut. It is also important to note that individuals who are susceptible to an apple allergy will only be affected by the raw fruit and not apples that have been cooked or pasteurized. This is because the allergy causing proteins cannot withstand either preparation process.
Almond (Prunus dolcis, synonym :. Amygdalus communis) is considered as a tree nut although almond belongs to the family of Rosaceae that also includes apple, pear, peach, cherry, plum, nectarine, apricot, and strawberry.

Why can people allergic to apples eat Apple pie safely?

Cooking with heat changes the protein. Sometimes this is enough to fool the immune system into thinking it isn’t going to cause trouble.Oral allergy syndrome (OAS) is not limited to the skins. If you eat peeled fresh apples fine, but not skin-on fresh apples, it could also be still OAS, or it could be pesticides on the skin.It can also be mild enough of an issue that people won’t notice if they eat a small amount, cooked.

What should I eat given my intolerances?

Sounds like you are relying too heavily on convenience foods.  You have not mentioned any allergies to vegetables, yet, you are not eating them.  Besides salads, there are some easy fresh veggies, like baby carrots and sugar snap peas or green beans.  You can quick-microwave vegetables like broccoli, cauliflower, carrots and many others using some vegetable broth and some sea salt, if you don't like them raw.  You can quick-stir-fry or saute lots of vegetables without too much time, to add flavor.  Looks like you can do beans.  There are chickpeas (garbanzos), kidney beans, cannellini beans, navy beans, black beans, pinto beans, and tons more, that you can add to salads or quickly blend into a delicious bean dip with garlic (fresh or roasted), some lemon juice, and a vegetable oil, if you can't do olive because it's a stone fruit, then use corn oil.  Can you have melon, oranges, grapefruit, grapes?  Look at lists of fruit families for other options.You really need a doctor and nutritionist to help you.  You definitely need to have blood drawn to confirm if any of your vitamins are under or over, especially if you are not taking supplements.  Given your issues with dairy and meats, you probably need calcium and iron, maybe vitamin D, B12, B complex might help, but don't get anything until you've see the doctor.If you are otherwise relatively healthy, maybe you are just carb overloading and so you are tired from that, and inertia can play a role, because the more tired you are, the less you move your body, and the more tired you feel.See the doctor, get a full checkup with lab work.  Talk to a nutritionist.
