It can be layered, as many times as possible and comes in various shapes and sizes.The term Cake is quite generic in nature and applies to many sweet, baked products. If you consider only the terminology, cake also applies to any flat mass, like soap, or can even be savoury, like meat cakes. Though, the common use of this word is for types of dough that are used as bases or for fillings- like puff pastry, short crust pastry, phyllo(pronounced -filo) pastry, and choux (pronounced- shoe) pastry. Even if the cake were to be made from box mix and decorated as an elegant wedding cake that would take more than one hour to decorate, and cake decorators are not going to do it for $10! At the small cake shop I work for we get orders of complete “fake” (styrofoam round) cakes because the cake is just there for decorations and pictures. People have paid $2000 and up! It’s all about the details of the cake that make it so pricey.Now in terms of flavor, every cake shop is different. Our cake shop does completely mousse cakes which add to the price. The difference from a scratch bakery to a grocery store cake is that most grocery stores don’t make their cake in store. They order the cake frozen cut them out to the size needed and possibly use another quick powder to make the frosting. Whereas from scratch bakeries will make everything from cake to frostings. This allows places like Walmart , sams club and jewel to have such inexpensive cakes.These are not my pictures. I’m sure the yellow cake took more than a couple hours to make, just a less skilled decorator but they worked hard on this cake. But still worth more than $10, I hope this will make you appreciate cake decorators, it is an art and skill that needs practice to make an amazing pricey wedding cake.

Can anyone tell me the difference between a shortened cake to an "unshortened" cake?

Well, there are two kinds of cakes. The shortening cakes and foam or sponge type ones.
The shortened cakes have, of course, shortening (fat) margarine or butter, with some flour, eggs, some liquid, a leavening agent, just like baking soda or baking powder. You may have encountered these kinds of cakes before, since they're very common. Some of the white, yellow, chocolate or pound cakes you know are good examples of shortened cakes.
Shortened cakes, when done properly, have a good, standard or uniform shape. They have slightly rounded and smooth tops, too. When you bake them, they have evenly browned crusts, which are tender. Sponge cakes use both egg whites and egg yolks. Additional leavening agents are sometimes used. But there isn't any of the margarine or butter, or any sort of extra fat in the batter. The fat would break down the foam created by the beaten eggs in the batter. A jelly roll is an example of a sponge cake.
Chiffon cakes combine the lightness of foam-type cakes and the richness of shortening-type cakes. These cakes contain egg yolks, leavening agents, and vegetable oil.

You can take the yellow cake mix or any other flavor and melt the 1/3 cup butter and use it instead of the oil called for and you have a Golden Butter Cake!!

I buy the least expensive cake mixes on the shelf and "fix" them. Using butter instead of oil, adding a package of instant pudding mix, using milk, half n half or cream instead of water, using Sprite or 7-up, Coke, Dr Pepper, Gingerale, or Rose' Wine instead of the water. and adding a teaspoon of vanilla,or some other extract flavoring. I have also added a drained can of mixed fruit, a cup of any kind of chips like chocolate or cherry,, a cup of chopped nuts - any kind. Adding a cup of coconut.

I almost never make a mix according to instructions. There are so many things to do to mixes, I could write a whole cook book on what to do to make them different.
