What was the relationships between kings and nobles in the middle ages?

Kings would annoint noble titles to extended members of the royal family.They would be aloud in the royal "court" close to the king.The nobility would in turn macro rule certain districts like mayors of today.

Nobillity would also be neccessary for many of the kings offices such as treasury advisor or royal physican as they would be seen a trustworthy.

What was the right relationship of rulers to their subjects?

The King was the King (or Queen) and the people were his sworn subjects. The nobleman were subject to a draft of sorts (obligated to send the King a certain number of knights) and the serfs worked for the noblemen, and were obligated to give a certain percentage of their harvest to the overlord. I'm not sure if there was a draft - I think the knight situation covered that - but the King was head of not only the State but of the Church as well, so he could pretty much do as he pleased with anyone.

In Absolute Monarchy King was chosen by God Favor to govern the people, to give Justice to them and to pursue people's good. So A King was aware of the privilege , but also of responsibility given by the role : let's remember a bad acting king could loose much more than life, as could loose the right of being King of all the family. People were subjected to the kings order and laws, but had the right to plea for justice and to obtain it. In spite to modern thinking worked well, up to the point the intervention of States rules on private life was limited.
