Cotton candy is a form of spun sugar. Since it is mostly air, servings are large. Cotton candy is often served at fairgrounds or circuses. Food coloring is used to change the natural white color. A typical serving on a stick is at least one ounce and contains about 105 to 115 calories per ounce. It is sometimes sold in bags containing several servings.

History
Cotton candy was invented in 1897 by William Morrison and John C. Wharton and first introduced to a wide audience at the St. Louis World's Fair in 1904 as "Fairy Floss" with great success, selling 68,655 boxes at the then-high $0.25, half the cost of admission to the fair. Fairy floss was renamed to "cotton candy" in the 1920s.

Tootsie Roll of Canada Ltd. has a bagged product called "Fluffy Stuff" that it claims was introduced at the 1893 World's Fair.

The United States celebrates National Cotton Candy Day on December 7.

Production
The machine used to make cotton candy consists of a small bowl, into which sugar is poured and food coloring is added. The bowl is spun at high speed and heaters near the rim melt the sugar, which is squeezed out through tiny holes by centrifugal force. The molten sugar solidifies in the air and is caught in a large metal bowl. The operator of the machine twirls a stick, a cone, or their hands around the rim of the large catching bowl, gathering the candy into portions. Modern cotton candy machines work in much the same way as older ones.

Texture
Sticky and sweet, it dissolves quickly in the mouth (due to its amorphous nature) although it feels like wool to the touch. It does not have much of an aroma although the machine itself has a cooked sugar smell when in operation. It is soft and fluffy when dry. When it comes in contact with moisture, it becomes sticky and damp. Because the sugar is hygroscopic, and has a very large surface area, it will become coarser, harder and generally less "flossy" once exposed to the atmosphere.

We called it "Seafoam", candy stores call it "Honeycomb" and the Australians sell it in regular stores and call it Violet Crumble.  It's a molasses syrup cooked to hard crack, with baking soda added at the end so it foams up before it hardens, and is then dipped in chocolate.  As kids, we only got it when relatives visited from Chicago-  and they'd gotten it at See's or some other candy store. If purchased in a candy store, it comes in huge chunks- nearly 1.5" high and irregular shapes, but generally cube-ish.  The Violet Crumble ("the way it shatters, matters") is, of course, a regular candy-bar shape.  It's crunchy to bite, melts in your mouth sweet and salty-ish, with smooth chocolate over top.  *yum*  The texture is rather like that of a malted milk ball. Second to that, 2Lb Macadamia Clusters Salted Caramel Milk Chocolate Kirkland (32oz) are killer.  I'm a very, hmmmm....  careful candy eater-  no just popping it in my mouth and chewing it up-  I like to enjoy what I'm tasting.  These little babies give me individual macadamias to nibble off, which takes off a great deal of the chocolate (chocolate is great, but cloying at times) and then a lightly chocolate-coated bit of salted caramel-  *yum*  If I've been to Costco, I give myself no more than two at night while reading in bed. Thirdly, Bassett's Liquorice Allsorts Candy, 600-Gram Boxes (Pack of 6): Amazon.com: Grocery & Gourmet Food .  I like licorice if it's the real thing.  *yum* Not so big on fruity candies, would rather have fruit.  And, often, I will put candy in the freezer-  some, like peppermint patties, are just better really, really cold.
