What's a good pizza dough recipe?
First of all, it all depends on the type of pizza you like: Neapolitan, NY style, Sicilian, Chicago style deep dish, etc. Then on the type of oven you have (wood fired, grill, Green Egg, baking stone, etc). Each of those style of pizza and each oven requires a different dough to maximize the flavor of the crust.Let’s assume you want to make a Neapolitan-style pizza in a domestic oven, using a baking stone. Good, that can truly result in a wonderful pizza, assuming you get the crust right (every Italian will tell you that a good pizza is at least 50% the quality of the crust, possibly more) and add few good quality toppings: simple San Marzano crushed tomatoes (no extra cooking: tomatoes are cooked once in the can, another time in the oven over the pizza: no need to make a special pizza sauce cooking even more. Just add a bit of salt, basil and oregano to a good can of tomatoes and crush or blend them), good mozzarella cheese, not too much, and just 2–3 extra toppings. Overloading your pizza results in soggy crust and muddied flavorsSlow rising and fermenting time is key to flavor, together with a high quality flour. Making dough is easy when a few basic rules are followedThe best recipe for a domestic home Neapolitan pizza is without questions Peter Reinhart’s.
