Cheese in freezer, then fridge?

Freezing will stop any cheese from going moldy/etc, so you don't have to worry about safety at all.

For taste, freezing works pretty well for most cheeses but not for a few others (especially soft ones like Brie, etc).

I keep shredded cheeses like mozarella and jack/cheddar/etc in the freezer all the time, and also parmesan, gruyere, and cotija cheeses then grate whatever I need at the moment...

The *texture* of semi-soft cheeses that you'd eat in pieces though like cheddar, etc, can change a bit but not enough to bother some people (and will be totally fine for cooking).

Is eating uncovered cheese in the fridge safe?

I took out a block of cheese from my fridge earlier this morning and noticed the part that was uncovered had a completely different texture and color than the part that was covered, i.e. it was harder and darker. Is this part still edible or should I just throw it out? Also, is it still safe to eat the part of the cheese that wasnt effected? thanks

There is a argument that cheese should never be put in a fridge but be permanently stored in an old-fashioned cold room like a larder or pantry. It’s not a French thing necessarily as many English do it too.Fridges kill the flavour of a decent cheese, but because we live in centrally heated houses these days, there are no areas cold enough to keep the cheese properly, so into the fridge it goes.At least taking it out before the meal gives it a chance to recover.

How long can Tofu Feta Cheese last in the fridge for if it is in a sealed airtight bag?

I bought some Tofu Feta Cheese which is in some kind of curry sauce which is sealed in an air tight plastic bag/plastic package.

It has been in the fridge for around a month, should it still be safe to eat? It obviously hasn't been opened in that time either, so the bag is still sealed.

I can't see the expiry date on the plastic package, but the date of when it was put on the shop shelf is the 1st of February this year.

I read this as, ‘some cheese I have taken, sliced some from but not used it all and then left some out on the counter for a day’, but other answers assumed this meant that American, orange, dairy based stuff that comes in individually plastic sleeves. I can not answer for the processed ‘cheese’ slices (won’t touch it) so I’ll go for my original assumption.If it has not been left so that insects, flies, or other vermin can get to it, then I would say, yes. However, the state it is in may not be to palatable, so that may need to be addressed. If it smells off and you are unhappy with that - throw it away. If it smells fine but has dried out, then decide whether you want to eat it as-is, or use it for cooking. If it seems okay, but you don’t want to use it just now, then freeze it - but frozen cheese is only really good for cooking with, whether it goes in fresh or not-so-freshI’ve made my own cheese for years, on a small, personal scale, and once you do that you come to realise just how resilient a food-stuff it is. I never bother with the use-by or best-before dates on supermarket cheeses. When I get it home it comes out of the wrapper and is stored and I monitor its condition to decide when to eat it. Marked down cheese can be one of the best bargains you can get as it is usually perfectly fine. I generally store, shop bought, cheese in he cold area of the fridge and then take it out prior to use. For hard cheese this is long enough for it to get up to room temperature, for funkier cheeses - blue cheeses and the like - it might be a day or too, left out in a mini cheese cave, to allow it to develop a “sweat”. (Ice cold prosecco, crackers, grapes and a smelly, mouldy cheese - yum.)

Cooked refrigerated food and last a week or so if it is properly wrapped and kept at 40º.Food that is spoiled looks spoiled, smells bad and doesn’t taste good. Nutrition goes out the window, too, if food is old. I always smell food before I eat it, and that’s a good rule in the kitchen.

If the block of Polly-O mozzarella cheese in the fridge is moldy on one end is the other end okay to eat?

how much mold are we talking about? if a little, yes. just cut it off, however if there is a lot of mold, and about to cover the entire block, i would throw it out.

mold is ok on hard cheese like parmagan, but not ok on soft cheeses like brie and mozzerella. and yes, brie is ripened with mold, but it's a careful process not involving spoilage molds.

Oh no! I left a package of shredded cheese out of the fridge 24 hours. Can I still eat it, or will I get sick?

Your o.k, I am former chef and it will not kill you, I have had grated cheese in my frig for weeks and never get mold and as the one person said about bleu cheese and all cheese in fact are just crawlling and covered in bacteria and molds, that is what makes them cheese, 24 hours nothing, 24 days maybe, 24 years I would think it is pasts it prime, do not listen to any-sayer, half of them do not know what there talking about I do, ate some of the oldest, stinkiest and foul cheeses made in th world, I am 51 and am still here???We used to leave cheese tray and board out for hours on buffet and wine tasting as the other person said cold cheese loses it taste and texture, remember it is only milk, salt, a souring agent and bacterial culture to begin with.
