Why doesn't In-N-Out have better fries?

According to millions of their customers, they have the best fries. I’m not a fan. I actually prefer Freddy’s fries.The difference between ALL other fast food fries and In n’ Out’s fries is that all other fries are pre-cut, frozen and then fried frozen. In n’ Out brings in giant fresh potatoes and then cut them in-house as needed. Then they fry the fresh cut potatoes.Here’s a video of what it looks like.

How are In-N-Out's french fries made? Are they fried once or twice? They seem a little soggy to me.

In and Out fries are freshly made. They are not as crispy as some other fries because the potatoes are not starched. Starching involves soaking the cut potatoes in cold water to remove much of the starch making them crispier when fried. In and Out fries are thrown to the fryer once they are cut. You can ask for “well done” and they will your fries a little longer in the fryer. It will be crispier but still not as crispy as say, fries from McDonalds.

Why are In-N-Out fries so inferior compared to their burgers?

As much as I like IN-N-Out burgers, I don’t think their fries are very good. And I think this is why.In-N-Out is all about freshness, and they buy fresh potatoes, peel, slice, and cook them as needed throughout the day. Sounds great. Sounds like it should be better than frozen fries. Right?Well, no, not right. French Fries really need to be cooked twice. The first frying is at a lower temp and it partially cooks the potatoes. Then you let the fries cool off; let them rest. After a bit, heat the oil to a hotter temp and put the fries back in the fryer and get them brown and crisp. By the time you get the inside cooked all the way the outside is maybe too brown and there is no crispness to the fries. This is In-N-Out’s flaw.Now what about all those other guys? The ones using frozen potatoes? Well there’s the rub. When potatoes are processed, they are par cooked first, then frozen. They get that first stage cooking at the plant. Why is In-N-Out burger so tasty?

I can't speak for them directly as I have no connection to the company but I can tell you what I do know as a loyal fan...Fresh never frozen meat, often provided locally.Fresh potatoes cut into fry shape on the spot mere instants before cooking and cooked in hotter then usual oil. Not mashed potatoes and additives squeezed into a french fry shape and frozen like most fast food places. Milkshakes made with real Ice-Cream.Specialization. No chicken sandwich, no salad, no fancy value menus. Just Burgers, Fries, Drinks and Milkshakes. When you do only a few things you learn to do them best.Ridiculously high standards for cleanliness and quality.No franchising. By keeping every store directly owned by the family they have tight control over every facet of the stores. When you franchise it becomes harder to control quality. This does mean it is not feasible to build out to thousands of locations like McDonald's or other burger places do but you always know who's really running your local IN-N-OUT. Even Texas and Arizona have stores now. They are growing smart instead of growing fast.< Though they have no bacon! > : (They have a "secret menu"! Why do In-N-Out Burger fries suck, but we all keep buying them anyway?

In-N-Out prepares, dices and cleans all their fries on-site. They come in sacks of potatoes and everything is done just around the corner in the back of the store. Since they don't come premade, are never frozen and have no preservatives in them, they go bad pretty quickly.If you frequently get them to-go, bring them home to eat or wait a while in general before eating them, they're not too fresh and not too great. Try eating them first the next time you get them.You might also just not like the fries, which is fine too.Worked at In-N-Out for 2 years as my first job.

Will In-N-Out make you a milkshake with fries blended in?

I can say with confidence that In-N-Out will never blend fries into their shakes.I've done the same as you, used fries like a delicious, salty, edible spoon to guide that marvelous shake-y wonderland into my mouth - but this can never be an official offering of In-N-Out.For starters, as Lang Tran pointed out, the shakes aren't blended. In-N-Out uses a soft-serve machine that they fill with liquid cream (a terribly splashy affair), mostly freeze, and then pour into cups. No blending. (There are pressurized tanks of strawberry and chocolate syrups that 'blend' in with the vanilla base on its way to the spout, but it's not an open process - and you certainly couldn't get a fry in there.)Additionally, I think you'd lose 90% of the enjoyment (flavor, texture, etc.) by having the fries blended instead of intact. A blended-fry shake isn't nearly as appealing as the dipping option.For those reasons I can firmly say In-N-Out will never offer a shake with fries blended in. The company's quality standards prevent them selling anything they aren't completely confident their guests will love, and a blended-fry shake is guaranteed never to make the list. They may one day have a need to keep a blender in every store, but it certainly won't be used for fries.Cheers!

Animal Style - Mustard-cooked beef patty, additional pickles, extra secret sauce with grilled onions.

Flying Dutchman - 2 beef patties, 2 slices of cheese. That’s it. No lettuce. No onions. No bun.

Monkey Style - With fries in the burger. The fries are suppose to be bananas.

Protein Burger - Any burger you want wrapped in lettuce instead of that carbohydrate-laden bun

Extra Toast - leaves your bread on the grill a tad longer resulting in “crispy buns

Fries Animal Style - French fries with secret sauce, onions and cheese on top.

Neopolitan shake - Strawberry, vanilla and chocolcate all swirled together — not blended.

Is McDonald fries or In-And-Out fries better? Personally, I like In-And-Out fries more as it is directly from fresh potatoes.

Burgers. Ronald has no chance against the Double Double.  It is the perfect size, the meat is fresh and fantastic and they use real cheese instead of plastic.  The small menu allows them to focus and do a burger right! I'm going to enter dangerous waters now as IAO has a huge brainwashed fan base that don't want to hear that anything from this place is not superiorPlainly put, the Clown slaughters In-And-Out in the fry department. They kill everyone.  The King has changed their fry recipe a thousand times to try and win that market.  Wendy's sandblasts salt onto theirs and still fall short, Carl's doesn't give a damn as long as they serve it with a back hoe, their customers are happy.  I give you the fact that In-And-Out actually chop their potatoes right in front of you and they're no doubt about as fresh as you can get, but they fall short somewhere along the line.  The fries are delicious if you eat them the "second" they are served to you.  You have to wolf them down and let your burger get cold because after 60 seconds the fries almost taste cold and undercooked.  For best results you basically have to "bob for fries" out of their grease vat.There's just magic that happens in Ronald's Village, where his Elves (the Fry Guys and Grimace), have been forced well beyond the labor laws set forth by Mayor McCheese and enforced by Officer Mac.  I even worked at McDonalds 30 years ago and I still may eat fries that I cooked over some of these others today!  They have perfected the potato and captured the essence of what the boring root vegetable should be.  The fries are frozen when cooked.  Name one other frozen fry with flavor!  Even their hashbrowns are amazing, but I think they use the same drug in these.  Why do you think Birdy The Early Bird is always crashing.Piping hot, cold, soggy, burnt, hell, even the one you find a week later in your car's floor mat, they are just perfection.Now this is about one of the only things they got going for them and is why they've been struggling.  It's time for Hamburgler to jack someone else's burger recipe for a change and IAO is not a bad place to start...I'm talking the original Hamburgler, the one that scares kids in their dreams...rubble rubble.
